So my younger bro picked up a bottle, while in Cali for me, for Xmas. Thanks redliner8!!!!!

It says on the bottle, "...can be aged for up to 1 year..." I know some sours can be stored for 5 years or more. Does anyone know if the 1 year is a 'suggestion' and it can really be stored for (much) longer?

Happy Holidays everyone. And Thanks again mein Bruder!

Jacque Pepin is a reknown chef with whom my wife and I once took cooking classes. Everyone asked him throughout the class after we'd cooked something..." can I freeze it?" He always said "yes, of course."

The course was ending after about 8 weekly classes when, yet again, a nice woman asked, "can I freeze it?" relative to a dish that was prepared. He finally said very politely..."You know, you are all asking the wrong question. Clearly, you can freeze anything. The question to ask is "Can I eat it once it's defrosted?"

So, to paraphrase, of course you can age it. You can age anything. However, what it will taste like after aging is another question. Many sours age long and well; many don't, just like several other styles of beer. Mother Funker was delicious in my opinion new and with a few months on it. Now, the past few bottles I've recently had seemed very out of balance, old and really not very enjoyable. My bottles all go into a very cool cellar right after purchase so I know that they've been stored well. On this one, regardless of what the bottle says, I'd open it immediately and hope for the best. I don't think any more age will assist this one, and I'm a huge fan of the Bruery and of this beer. But,.....I'd say go for it now. JMO

After one year it will probably eat right through the glass bottle.

I wouldn't age it. That shit was practically straight vinegar when it was released.

Gross haha. The only way this beer would be tasty is if you just had miracle fruit.

Drink the whole bottle as fresh as possible and hope that you don't piss blood.

Use it to make pickles. If you want a recipe, send me a message. They turned out fantastic!

I've found a lot of people with really unrefined palates loved that beer, but most sour snobs thought it was nasty (myself included). I thought it finished far too strongly like acetic acid. Since that shit gets worse over time, I'd open it ASAP and hope for the best.

I actually used the second half of my bottle in a homemade citrus vinaigrette salad dressing - it was great, and I didn't have to add any extra vinegar!
