Ok..brewery person. Thanks for the correspondence. Not a lot new here. I've already stated Styrian Golding is a good hop choice for this beer and in no way should cause this sour flavor. What I've been trying to say and apparently hasn't gotten through is this is not a "light" lemon hop flavor that comes from hops such as this. It's sour and off.

And I did say the following earlier in the thread.

"I also noticed the can had a lot of give to it. I almost feel like if I squeeze real hard I might crush it open. Not quite but it has a lot more give as I squeeze it than other cans I have in the fridge including Dovetail Hefe."

    Also said this...

"Just opened can #3 and that sourness is once again there. Drinking side by side this time with Aardwolf Vienna and again it sticks out like a sore thumb. Definitely issues with these cans unless that is how you want it to taste. "

Dovetail Vienna has been my go-to in the Fall/Winter, and i’ve never gotten a sour one. X03 Wild Vienna on the other hand…

Low fill cans are a separate issue, it could be a faulty seal allowing oxygen in over time. Try contacting the brewery or store for a proper replacement/refund with the receipt and remaining cans. At the least, tell the store so they can pull them.

Please don’t discount an entire brewery over one beer that clearly wasn’t as intended. Dovetail makes a lot of great beers, and I personally love their unfiltered lagers. No brewery is perfect though, QC issues can occur anywhere.

Definitely not discounting the brewery over a faulty six-pack. I enjoyed their Helles and Hefe that I also got.

Just to put a close on this I did finally got an opinion from the top notch brewer I know..I'll just transcribe his thoughts.

"Definitely infected and had almost no carbonation. Those cans for sure had a bad seal. That sucks. I'm surprised they made it past QC"

I followed up and asked if he thought that happened from canning or the brewing. He said...

"After packaging for sure. It either didn't get seamed correctly or got damaged at some point. The beer isn't supposed to taste like that."

So definitely infected but not infected from the brewing and the issues I noted definitely were not from an impression left by the Styrian Golding hops as suggested by Dovetail brewery person earlier.

As I previously noted..."I highly doubt Styrian Golding hops would ever in a million years do this to a beer. But that was brought up as a reason and if that truly is what can happen then it probably isn't a great hop for a Vienna when it tastes more like a sour beer than a Vienna lager. But like I said I really don't think the Styrian Golding hops are the issue."

agree - I picked up a 4 pack today and it’s super drinkable with a smooth , almost creamy mouth feel. I was worried about the experimental hops but they just add a little citrus bite and not bitter at all. A really well done beer imho.

Dovetail & Begyle 'Mayfestiversary' is this wknd, Sat & Sun. Free street fest with live music, it's a really cool event. Lagers & wild ales at Dovetail, ipa's & ba stouts at Begyle, it's the perfect partnership. They'll have both taprooms open, with additional bars set up throughout. Begyle does timed tappings in their garage (ba stouts, etc).

    Taplists, food, music lineup, map:

There's a bluegrass band called The Box Band that plays earlier in the day on Sat every year. This year they play 2p Sat, I highly recommend.

This event, along with their similar Oktoberfest event, are two of my favorites, cheers!

    Bluegrass band? Prolly not.

Even the Lincoln Square May Fest wasn't exactly "to style," but it sure was fun!

At least what I remember.

I get the impression you'd prefer 10 hours of polka music... lol the acts prior are more traditional/"to style," but bluegrass/folk music seems pretty fitting for an event like this nonetheless, prost!

And I get the impression you've never been to Frühlingsfest or Oktoberfest in Munich.

And it's not all "polka music."
Not sure how you see bluegrass as "fitting" to the north side of Chicago or a beer fest, but whatever -- I was replying (rather tongue-in-cheek) to @Jsimansk anyway.

    Oh yeah, Prosit!
