    I was surprised that there weren't more releases closer to this weekend.
    I'm not a fan of the recent trend of needing to buy bottles a month or more in advance of being able to pick them up

    It’s all about allocation. Best to be prepared. Better to have all those bottles filled for every preorder on the day of release in case the majority of pickups happen that weekend. Especially with proxies involved. I get the trend.

    So I was able to try some food from Hoppy's Chop Shop, the new onsite food truck, over the weekend and thought it was super tasty. They had bao buns on the menu and I tried one each of the short rib, fried chicken and pork belly options. Definitely recommend giving it a shot if you visit!

    Hopefully a pickup date for the For Alex bottles. Need some new barleywine in my life

    The Barrel Aged Up In The Early bottle pickups start next week (from July sale) and before that it was the For Alex sale (May). Wonder if there will be a new release for a double pickup next week, feel like that has happened a few times before, and or the For Alex bottles will be ready for pickup.

    Per Wax Wings IG post, labels are delayed for this so bottle pickups are rescheduled for next weekend for anyone who snagged it in the preorder sale. It will be released on draft today though.

    Got my introduction to Wax Wings are the Great Taste of the Midwest on Saturday. They had several on tap and I got to try Condor Valley Fluffsicle and Up in the Early; both were quite delicious and this will have to be a stop next time I find myself near Kalamazoo.

    In 2020, we had never brewed a barleywine. I took a trip to Rochester Minnesota for a bottle release at Forager. At a beer share the night before, I was handed a bottle of Kitten Treats and it completely blew me away. I started working through a recipe for a ‘dark barleywine’ in my head on the drive home and a few weeks later we attempted what I had drawn up. From the first sip out of a fermenter, before it was ever in barrels- I knew it would be special. As we sampled through the first barrel that winter, it was coming together wonderfully. The second barrel tempered the heft of the body and added a spirited balance, culminating in the first iteration of Chorós.



    I’ve waited a long time to put that label on another beer- the pressure after the reception of the first version and the typical “b1 was better” response made me hesitant to try and re- release it. This new version isn’t an exact clone of the original- that wasn’t our aim. It’s the highest expression of our barrel aged barleywine program. More mature and refined- a credit to the evolution of our cellar and all the hard work our guys have put toward its development. Toffee and caramel leading notes in spades. Supremely spirited. Balanced. It has excited me in the same way as the first release of Chorós and is, to my tastes, our best barleywine effort since. I couldn’t be more excited to share this with all of you.



    Chorós 2023: Double Barrel-Aged Barleywine | 13.5% (500mL bottle)



    Aged in a 1792 bourbon barrel before being transferred to a Heaven Hill barrel where it finished developing.

    Next up. Not usually a bit fruit in my stout guy but WW gets the benefit of the doubt from me so excited to try it. Pickup begins in mid-October.


    Barrel Aged Thicket | Barrel Aged Stout | 13% (500ml BOTTLE)

    The return of a beloved stout from back in the day, after an extended rest in bourbon barrels. Conditioned on coconut, hazelnut, vanilla and blackberries.

    Did you try/like hive gospel? I was hesitant on that one because of the blueberries

    I was super hesitant on Hive Gospel but was really impressed… It was incredibly well balanced and really enjoyable.

    Hive Gospel was great!
    I really was worried about the blueberries but after my first bottle I grabbed a couple more because they were light handed with the fruit

    A couple of recent improvements beyond the food truck include two extra TVs inside (three total now), a dog friendly patio, and some innovative seltzers (strawberry cheesecake, Blue Moon ice cream, etc.) - really appreciate the taproom updates as a local.

    My only complaint: I have tried to go for dinner three times now (each time around 6:00-6:30pm) and they have either been totally sold out of food or down to just burgers and fries. Food all looks killer, but I've pretty much given up planning on eating there. Hope that improves moving forward and keep up the good work!
