Phase Three Brewing (2023)

Really weird. I've only ever seen them where they face the window, or face the kitchen. There's a restaurant in New Orleans where they "hold" those spots in front of the kitchen for walk-ups that don't have a reservation. I always try to sit there - I like watching the kitchen run. Plus, I have a ton of allergies, so it's nice to interact with the chef/cooks directly.

Looking at a wall? Not a chance.

 

I've sat there for 10 minutes on a busy weekend night and had a pour while waiting for our table. Also have sat there later in the evening with a group of 2-3 guys.

I think those seats are perfectly fine for that, and it's better those exist as an option for that type of thing IMO.

Yes, I wouldn't want to sit down and have a full meal there.

 

Gotta echo this. My last two stops for lunch there on a Saturday were pretty bad. First time sat alone at the bar. Took forever to order. When food arrived, had to wait again for any kind of napkins and silverware. Bartender never asked how the food was or if I wanted a second beer so I wrapped up my burger and left. Second time this past Saturday and server never came back to ask how food was or if I wanted another beer. Had to walk up to the bar to get ketchup because server was MIA. Plus, Umami burger as dry. Is crap service a typical suburban thing?

 

Well, fuck...I think Phase Three just won me back at the 11th hour for renewal. THE NEXT EUNOIA IS JUST BEER AND BARRELS, NO FUNNY STUFF! First time ever.

"For Eunoia 16 we decided to forgo adjuncts. While conceptualizing the blend for Eunoia 16, we had an idea about 8 months prior to blending to take roughly 75% of the total casks we had earmarked for the potential blend and put that portion in Lairds Apple Brandy casks. We let the casks rest for about seven additional months before tasting. We decided, that while we were on to something we were really digging, to pull back the amount of apple brandy casks to about 55% of the total final blend and introduce additional whiskey casks for better balance.
Instead of adding adjuncts, 55% of the blend was aged in apple brandy casks to impart subtle apple, spice, and a unique wood profile. The whiskey balances it all out. This may be one of our favorite Eunoias we've done. Tons of oak, spirit, apple, and our unmistakable "stout recipe 2" we love so much. The total age time for Eunoia 16 averages out to 19 months."

I’m not a P3 (or suburban?) homer, but I would chalk the service up to still being new (especially during events or other busy times). It takes a good couple months to get the kinks out for any new restaurant. I haven’t been, so just giving them the benefit of the doubt from that standpoint.

 

I think your more likely to get crap customer attitudes than crap service these days, but that's just one idiot's opinion.

My new member invite has the same 12/17 cutoff to purchase. The FB story post today also said “first” wave. I assume the next wave will be openings made from those who do not purchase either new for this year or renewals.

And is Eunoia 16 the first beer of the next membership or the last one for 2023? Selfishly hoping for the former.

Womp womp. I’m a sucker for apple brandy- the recent Dimensions of Time with apple brandy barrels incorporated was one of the standout stouts of the past year for me. Hopefully a trend though for P3 to lean into barrel combinations rather than dumping 31 flavors into all of them.

31 flavors is a nice way to say rotate through cinnamon, coconut, cocoa nibs and vanilla
