    I would always try to slow it down & add coals once they burned down. Not a bad way to go if you are killing time, otherwise, not so much

    This is my original New Braunfels whole wood smoker from the 90s. I bought this and brought it to Block Island and had a welder friend convert a gas grill to a lump charcoal fired grill. I was, and not as much for convenience, a big wood burning fan. I introduced wood burning and using different types of wood to several restaurants. It was huge and then kind of died out but now it's boutique again. Always learning and reaching is what keeps it interesting to me. No pellet grill but I have this and an electric smoker plus a number of other grills. Sorry I like talking about food and cooking.:flushed:

    Clearing the decks of work, bullshit, and odd requests to focus on beer; and a new beer at that.

    Outer Range's Down Days, a west coast IPA. 6.5% ABV.
    Simcoe, Citra, Galaxy.

    Canned 8.22.24

    A nice solid beer, might grow on me in a bit as it warms, almost too smooth and not enough bittering at the end of the palate but it's a good beer... yep. I'd drink this all day, if I could drink all day.
