DDH Congress is back at Trillium

    My pour, for whatever reason was exactly what I wanted it to be. I just couldn’t find a flaw and it opened more as it warmed!

    It’s interesting, it’s definitely the Trillium Galaxy flavor. Much more impactful and more of a sharp pineapple hit and flavor(no burn) But truly what I remembered fruity galaxy to be. I think it’s leaps above recent Congress batches. Which to me, could almost swing slightly tart and less body. This was full mouthfeel and the happier and pleasant side of the galaxy and pineapple.

    in contrast I find the galaxy Nate has been using to be a little more aggressive, somewhat ripping, but a slightly creamier pineapple and fruit flavor. Less of the sort of acidic side of pineapple, that you might find with Trill Galaxy as well as their yeast. TH yeast tends to have those esters overlay each sip you get, which is what they used to achieve that sorbet flavor and texture.

    I’m sure this sounds convoluted, but I know some folks might get what I’m trying to say.

    I was happy to find a pack in a store cooler today and not have to go to Canton to get it. Looking forward to digging into it

    Jealous! I had mine out on the patio as well, it was sunny but about 40 degrees. You win.
