Pimp my IIPA

    91% Maris Otter
    9% Palm sugar

    Mashing at 151 degrees
    u05 yeast

    Using 1 oz. Apollo (18% AA) for bittering, I only want Citra (13.5% AA) for flavor/aroma additions and have up to 6 oz. I am shooting for 8% ABV and 84 IBUs. How would you schedule the hop additions?

    Whoops, 5 gallons. Leaning towards a 60 minute boil and it will end up in bottles, not a keg.

    For a 6 gallon batch, you could do your 1oz. of Apollo at 60min, a 1oz. Citra addition at 5 min and a 2oz. Citra addition at flameout will get you in the range you are looking for. After that you can do any combination of additions of hopstand or dry hop with the remaining.

    In an attempt to get the FG as low as possible, I would also consider mashing lower, like around 147 for 90 minutes, going more 80%/20% grain to sugar, and pitching a big healthy starter or an appropriate amount of dry yeast for whatever your batch size is. You really want to get it below 1.020. My personal threshold is 1.014 for IIPAs where I find them dry enough to be enjoyable. YMMV

    1oz. Apollo at 60
    .25oz. Citra at 5
    .75oz. Citra at 0
    Dry hop and/or hopstand as you like (my $0.02 is 1oz hopstand at 160 degrees for 30min. Then 1oz. Citra at end of ferm. And another 7 days latter. And bottle 7 days after that addition.

    4.0% Crystal 40
    4.0% Carapils

    Mash at 150 degrees
    WLP090 Starter

    1.5 oz. Apollo at boil start
    1.0 oz. Apollo at 30
    1.5 oz. Citra at direct flameout
    1.5 oz. Citra at post-boil aroma steep (160 F and lower)
    4.0 oz. Citra at 7 day dryhop

    I would consider scattering some Apollo in there for all of the late and dryhop additions, which will add some complex dankness to help combat all the fruitiness.
