Goose Island Cook County Stout

    As I understand, Cook County Stout is the base beer for BCBS, Big John, and Nightstalker. I don't see it in the database though. Has anyone had it or seen it?

    I think nightstalker is the base for bourbon county. Big john and nightstalker arnt barrel aged.

    Nightstalker is a hopped up version of CCS, so its not the base for BCS.

    Isn't:

    Nightstalker dry hopped BCS base
    Big John Cocoa Nibs BCS base
    BCS = BA Bcs base all blended
    Baudonia = Low storage BA BCS base

    I give the people what they want.

    Cook County is the base for Night Stalker (dry hopped), Big John (with cocoa nibs), and Bourbon County (barrel aged). It has only been tapped one time at an event during the Craft Brewers Conference of 2010, where it was unlabeled. The story is that Greg Hall (former brewmaster) overheard someone else call it Cook County Stout that night, and the name stuck. It is a beer that was made to be barrel aged. On its own, it's supposedly rather unimpressive and, from the mouth of Brett Porter (current brewmaster), it will never be released to the public.

    Also, the story behind Big John is that it was originally supposed to be Bourbon County Brand Chocolate Stout (this is from several reps and one of the barrelmasters), but they didn't have the barrel capacity at the time. It's a shame because that beer was released at Sheffield's (also during a Craft Brewers Conference event in 2010), and it was fantastic. Word is that some sort of chocolate BCBS may be released, but it would be more of a Mexican chocolate version with chilies and/or spices added.

    I could go on about Bourbon County and its variants all night, but it's past my bedtime. :sunglasses:

    Strangely enough, I did have this beer at the Fulton Industry event in 2010. Was a bit meh. While that event was one of the coolest things I've ever been lucky enough to go to (Thanks again, Pipeworks! :slight_smile:)

    Cocoa BCS at that Sheffields Takeover (Where they had Ancho, Vanilla, etc.. in August 2010?? Fun night!) was pretty damn good though.

    It was a great event, but it wasn't really Chocolate BCBS. What they did for the blending event was pick through regular barrels that had distinct flavors, namely bourbon-y (alcohol), smokey, chocolaty, and vanilla-y. The one at Sheffield's was Bourbon County with cocoa nibs added, a distinct variant, not just BCBS that tastes chocolaty (my guess is that the chocolaty barrels they used for the Great Taste were the ones they used to blend Baudoinia).

    How have you not learned by now to not post any information you think you know about BCS. You should probably get independent verification from here on out before posting any "facts" about beer.
