    Whoa. I'm not going to start singing Joe Cocker (lol), but damn. Can't wait to see Jester King's version of a Gueuze. 18 months to 5 years though... I'm just going to forget I saw this so it can be a surprise. :slight_smile:

    Damn I'm excited for this beer, or rather, more excited for the possibility of drinking legit Texas made gueze in a few years. Or a lambic with Fredricksburg peaches. Dang! And then name it after female reproductive parts (e.g. FouFoune). 'Mulva'?

    Jeff - have y'all been throwing sour beer dregs on the walls to promote a beer bug ecosystem? Or did you leave the windows open overnight while the wort was cooling?

    We had two large, industrial size fans blowing in night air through the doorway, which was left open overnight. We also left the HVAC on overnight which brings in air from outside. We've been splashing sour beer around in the barrel room for months to prepare for this.

    I saw this and was stoked! So few breweries are doing this. I'm proud that we have one in our state.

    Now they just have to keep that thing in use all the time so we don't have shortages of tasty beers. :slight_smile:

    Jeff, even though I'm not a fan of Brett or Saison style beers, it's good to see y'all pushing the beer envelope here in Texas.
