Brews you ONLY like with some age on them

    We bought two DFH Theobroma's last year. We had one fresh and didn't think it came together very well. But we had the other one last night and thought it was distinctly better. Matter of fact, it was very, very good.

    I noticed this with some DFH brew such as 120, even though with them the reverse was also true, but can you name other brands were you only had a shine on them once they aged a bit?

    I have the hardest time not DRINKING those right away. Though, I admit, age doesn't hurt them at all.

    I'm a sucker for DFH Burton Baton with at least 6-9 months on it, turns into a better beer in my opinion

    Pretty much all Imperial stouts , Expedition, Founders, Plead the Fifth.

    Avery Mephistopheles. Can't drink it fresh, but it turns great with some age.

    I never had it fresh, but about 2 months ago I had a FW 14 and it is hands down my favorite barrel aged beer. Unbelievable!

    Yeti. It needs a year minimum IMO. It goes from a mediocre beer to a solid A in my book.

    100% agree.

    Bigfoot as well. Too hoppy fresh IMO.

    2012 BCBS was a great example. That beer was a mess. Had one last week and that one has finally come together. Still could use a little refining, but much more complete at this time.

    I also prefer to age non barrel aged barleywines and old ales. Third Coast Old Ale and Old Curmudgeon were much better with a year on them. I think Bigfoot is actually pretty good fresh, but a whole different beer a year later.

    Bigfoot, Samael's, Mephistopheles, The Beast, Uncle Jacob's, 120, WWS.

    For me it's usually beers with really high ABV, or really insane hop bills. Maharaja is plain awful to me fresh, but two years on it and I'll drink it like water. Same with Hog Heaven. Expedition is another good one, it's just too heavy when fresh but with age it fades down into a much more drinkable beer.

    I think that high ABV beers would probably top the list. I'm guessing they get helped by the alcohols becoming more rounded out over time and getting intergrated with other taste elements. Seems to be a theme.

    KBS with one year on it. BCBS ages well too but I don't like too many years on it...the oldest year I had was Rare (technically brewed 2008) and I thought it was past its prime, and that was a year ago.

    Palo santo. don't like it fresh at all. after a year, it is pretty stellar.

    Double Bastard, didn't love it fresh. Found much improvement in the year old stuff.
