    My students kept me late! I'll be down to DH to give this baby a try in 20 minutes or so.

    I did like it a lot better than Gotlandsdricka. The smoke has faded to a much more subtle level, which I prefer vastly. I liked the gin flavors, too--nice to finally try this in a beer. Definitely funkier than I expected. It's one of those things that I drink, and immediately say, "Oh, this is Jeter King," you know?

    I totally know what you mean! I could blind taste test new Jester King Beers and pretty sure I could tell it was JK.

    I need more RU-55 in my life. Aside from OGBM and the Rodeo series, I think that it's my favorite thing that they've ever done.

    We've been advised by brewers in other states not to undercut your local bottle shops in terms of beer to go pricing, which makes sense if we still want you to carry our beer.​

    I'd love to see JK eventually be legally able to do a Reserve Society of sorts. I'd be all over that. I've loved more beers from them than I've disliked (Noble King, Commercial Suicide, and Das Wunderkind! are the only ones I really don't care for)

    Hey Jeff. I've been wondering this for a while and haven't thought to ask till now. What prompted the decision to use most or all-organic ingredients in Jester King beers? Do you believe there is a noticeable difference in quality using these ingredients? For example, if I brewed a clone Jester King beer, but didn't use organic, would the differences be obvious in a side-by-side blind tasting? I'm wondering if perhaps the organic things give Jester King the distinct flavors that seem to set them apart from "all the other" beers.

    Good questions. I don't think organic ingredients necessarily make our beer better or different. In some cases, I prefer conventional ingredients over the organic ones. For instance, we still use Simpsons caramel malts from the UK in Black Metal over organic caramel malts because I think the flavor of the Simpsons malts is superior. Our principle is that we use organic ingredients whenever possible so long as they are not compromising the flavor or aroma of the beer. In other words, flavor and aroma come first.

    So why do we use organic ingredients whenever possible? I agree with my partner Ron Extract who explained it in terms of responsibility. Ron said:

    "For me, I've always been less concerned with residual chemicals in the beer than I am with just producing things in a sustainable and responsible way and knowing that the people involved with producing our beer aren't being exposed to harmful chemicals. Organic beer isn't necessarily healthier than nonorganic beer, but it's definitely more responsible."

    If the law changes, a reserve society or something like that should be legal in Texas. I haven't given much serious thought as to whether a reserve society would be desirable for us and/or the people who support us. I imagine there's mixed feelings about it. What think ye?

    If I can pay $xxx amount and it be reasonable and have a trustee pick up the beer, I'd be in on it. Especially if you do multiple fruit sours and Buddha's Brew variants and some stuff didn't hit distro. Just take my money!

    Personally, I'd enjoy and utilize it every year.

    The way I'd imagine a Jester King reserve society would be one that operates similarly to The Bruery's. Storage of bottles until a future date or trustee pickup. I'd like to see a majority, or all the "special special" Jester King releases be a reserve-membership in a way where Jester King can reward it's most loyal customers and fans. Special Special beers like the spontaneously fermented "gueuze-style", raspberry Uberkind/fruit sours, maybe some experimental batches with an option on your website to send feedback on, and most beers that takes more effort than usual but produces a lot of pride in the end product.

    I feel as though it's important to note that I am not saying I think all the lineup of JK sours or special beers should be reserved for a select few. I'm very happy that you guys have sent your product out of state to let people know Texas is producing some serious craft brews. Anyways, here's to your continued success.

    I thought off-premises sales were still a no-no at the brewery with the new bills?

    They would have to switch over to a brewpub license to sell to-go bottles/growlers on site.
