can you even begin to imagine the number of bugs that cantillon scrapes off their cooled wort? giant coolship, all windows open, yummy smell, you do the math. Where else does the wild yeast come from? the air? sure, but lets be honest here... it is like pollinating a flower... it comes on the buggies.
