Via Twitter this morning, Clark said today Toppling Goliath is starting up the "Solera Program", which the tweets said "Something new today. We start our Solera Program with 3 barrels, will add to it continually for the rest of our history. One is a 35 year. Our Solera Program will be for blending excitement, look for results in a couple years....don't worry, as time flies it will be in a blink." Clark - does this mean you will continually be using these barrels and adding beer to them (blending) for the rest of your history? So technically, 10 years from now, there could be a beer you release that has a bit of 10 year barrel aged beer in it from these barrels? Awesome!
Yes it does. We have been experiment with some things for a while and some of our 3 year aged beer was really an eye opener for us. Characteristics developed which were pure joy to experience and should be shared. A few sneak releases of our 1, 2, and 3 year agings have been trickled out under the SR-71 BBRIS program, however, it will be a few years before we have enough volume for excellent blending and bottling. We had a chance to grab two 27 year old barrels and a 35 year old barrel that Mike found and the timing was right. Cheers
I thought I read on here a while ago that TG is in fact working with some wild yeast strains, which I hope means sour beers, but I agree with jawzman that the age quality of these barrels probably means awesome stouts or barleywines. Can't wait to see what a few years down the road brings!
Sounds great! Assassin is one of the best barrel aged beers I have ever had. Unfortunately I've never had KBBS, but maybe one day...*sigh*
I'm very excited for this, and if 3 year SR-71 was any indication...another killer beer from these guys.
There's a nice microbial mix I've been working on, yes, but the summer won't be the time that any of those things will start. You should have seen, up close, how good of shape these barrels were in. They're from the heart of one of the rickhouses. Of course, they'd have to be, if aging for that long. The aromas from these barrels have me sold, I've got to find a way to get a bottle that bourbon. 35 years in the barrel... that's got me curious what they're up to. 8 years longer than the PH 27 year I've been dying to try.
