Coolships in the US

    Was talking shop with another BA during an IP trade yesterday and we ended up talking about sours, New Glarus and Dan Carey saying that they're building a coolship because if you want to be a serious sour producer in Belgium, you have to have a coolship. That made me wonder what US brewers have a coolship being used to make sours.. off the top of my head (and a forum search of course), the list starts with these guys:

    Hill Farmstead
    Russian River
    Allagash
    Jester King

    I'm sure there are more that I forgot/don't know about. Brian mentioned that Crooked Stave may possibly have one but he wasn't sure. And I know that Anchor has one (for cooling). Anyone know the other US brewers that use a coolship in brewing sours?

    P.S.- this is mostly for curiousity rather than judging sours based on whether they were inoculated in a coolship or not.

    Crooked stave just posted a picture of their giant new coolship being delivered.... very excited about this one!

    Peekskill has one and just used it to open ferment a fantastic beer called Flavor Saver. Chief normally uses it to hop dam his hoppy beers.

    Could you please define what is a coolship exactly? Is it defining a room, a local flora culture?

    It's a big shallow compartment where beer is poured. It's intention was to be used to cool the beer but over the years it's come to be used as a way to expose the beer to wild years more easily.

    Basically a huge oak cask I guess? Since wild yeast will usually take refuge in wood?

    Traditionally made of copper, but quite a few people are using stainless now.

    I have one for Side Project Brewing as well, although small. It holds about 9bbls, just a little more than enough to fill 4 oak barrels at a time.

    In Lambic breweries the wort is cooled in the cool ship overnight exposed to local air via open windows/louvers. The wort is then transferred into the barrels that have been inoculated through many years of use.

    Some coolships are in clean rooms that are supplied with filtered air, as infections are not desired -Anchor for example.
    Edit - Anchor now uses it as a fermenter, modern cooling equipment issued.

    I believe Logsdon has one as well, no one has mentioned them. Though I seem to recall that theirs is like a hollowed out tree or some weird-ass shit, now that I'm saying that I think I may have hallucinated it because, seriously, who hollows out a tree and uses it as a coolship?

    Anchorage has one, but it's pretty new and nothing has been released. I thought Jolly Pumpkin had one, but I'm not sure if they have a dedicated coolship or just use an open fermenter. Not sure on New Glarus either, I think they have one in the works at least.

    I believe you are thinking of the Ale Apothecary's kuurna, which basically just acts as a lauter tun and isn't used to innoculate with wild yeast. Not sure whether or not Logsdon has a coolship though[​IMG]

    Not sure if Logsdon has one also, but you may be confusing them with Ale Apothecary. It's a spruce tree used to mash his Sahati.

    I believe it is Ale Apothecary that uses the hallowed out tree trunk for their Sahati

    This is a new terminology for me so I had to look it up (after fixing the autocorrect of "cool whip"). Definitely something cool! I wonder if the coolship will be at the NG old brewery; the one just as you enter town from the North side.

    I have read the the old Riverside is where they will do the sours. The new Hilltop brewery will be the clean beers.

    Hahahaha this post has me laughing so hard. Such an absurd idea....but then I scroll down and see that Ale Apothecary is doing it.
