Does anise (licorice) fade?

    I'm not a fan of stouts where anise or a licorice taste is really present. For stout day we had some 2012 and 2013 Expedition Stout and we could detect it in the 2013 but not at all in the 2012.

    Just wondering if that was a coincidence or something to be expected?

    As far as anise goes, a lot of people don't seem to like it but I do. It's old. Very old. Besides foods, the romans habitually used it for a multitude of applications. For example to diminish the nerves, for the treatment of epilepsy, to improve digestion or to boost the appetite. It's importance was so great that it was used like currency.

    If this is true, Stone Belgo Anise IRS must be worth one BILLION dollars per bottle. And here I thought that it was almost worthless as a beer.

    Well to get back on topic I also cannot stand the taste of anise but at least by my tastes I find the flavor to diminish with aging. Fresh Stone RIS or even Old Rasputin fresh seem to exhibit this flavor but after one to two years in my cellar I enjoy both of these beers greatly so either the other flavors intensify and cover up the anise flavor more or it diminishes over time.

    I think all aromatic type of flavors end up fading

    I'm assuming you're like me, and enjoy ice cold Jeagermeister or a nice glass of absinthe when you're not having a beer :slight_smile:

    This may or may not help but, I've picked up a few Blackmaker's Root Beer liqueurs from my store. Very good (and dangerous), but they use anise in it. I've found that when it's cold, anise flavor shows up more, and at room temperature, it's almost completely disguised. Let that puppy warm a little more than you usually would and see if that makes a difference.

    I was actually quite surprised in how much I enjoyed that one.Curious as to how it has aged as far as the anise goes.
