What beer started your "Cellar"?

    Man, that's a question that really made me think. I believe it was 2 bottles of Rochefort 10 and 2 bottles of Weyerbacher Heresy that I had. Oh, how things have expanded since then!

    2010 Abyss... still have it, and will be drinking it on Christmas!

    Cantillon St. Lamvinus. Acquired two bottles years back and still have one...since it was the first bottle in the cellar, it is hard to open it.

    2008 Matilda that I drank this year on my 60th bday along with a 2010 & a 2012 (shared w/ my daughter & bro-in-law). Still delicious--my fave of the 3 & one of my favorites of the year.

    Stone IRS 2011. Still have 4 bottles. I am drinking down my cellar and will likely retain atleast one of these original IRSes to bring the curtains down on the collection.

    Exactly that, with the twist that it started out trying not to be greedy, and ended up with denying the existence of the cellar to overly curious beer-hunting friends.

    I had saved a few bottles previously (Old Foghorn, Anchor OSA and Bigfoot) in the '80-'90s but the cellar really took off in the late 90s with the release of these variety vintage boxes (bought many of the Samichlaus and a case of Hardy).

    I, too, started with Bitches Brew. After I drank my first, I went 5 deep and then just added from there. How crazy and fun this has become!

    Bruery Fruet, and a few bottles of Corsendonk Christmas Ale ('11). Still have the Fruet, and 2 of the Christmas ales

    Ommegang Chocolate Indulgence. Aged it for four years and it turned out absolutely incredible. One of the best aging a I've done to date

    Anchor Our Special Ale, a couple years ago I broke some out and we did a 12 year vertical tasting.

    2010 Alesmith Decadence. Still have it. I was going to pop it open a few months ago, but then I noticed that they are re-releasing this beer, so I decided to hold onto it and try it side by side with a fresh one. Now it looks like the new one came out, but didn't make it to my neck of the woods, and I'm on the fence about going through the hassle of trading for it, so I may just crack my 2010 soon.

    Fuller's Vintage ale, 2008. Still have a bottle of that.

    But everything was nice and under control until I got a sixer of Westy 12 a year ago. Since then my cellar exploded from 15 bottles to 120 bottles.

    Olde School, it told me to age it for a year. For the whole first year, that was the only beer in my cellar. After I tried that beer, it was on. In that time (14 months), the collection has now neared 100 brews.

    The real sad part? I still only have one Olde School in there...

    Matilda. I had a bottle with a year on it and the improvement was what pushed me over the edge to begin cellaring.

    A case of 2011 palo santo still have abou 10 left. And tasting amazing!
