Beer Temperature

    I’m currently on a stout/porter kick and I was wondering what the most ideal way to bring your brew to optimal drinking temperature. I keep my brew in the fridge, but I feel that temperature suppresses some characters and tasting facets.


    Typically (especially when looking to review) I’ll take out a beer and let it stand for 20-30 minutes before pouring. I was wondering what the general consensus was on drinking temperature.

    I keep my beer fridge at 45 degrees. I take most beers out and pour right away. I like to see how it changes when it warms and I usually drink beers relatively slow so they have a chance to warm. Its a cool journey to take with a beer.

    I agree they are usually better warm.

    I also drink beers slowly, with my last sip at nearly room temp. I enjoy experiencing the evolution of aroma and flavor as the beer warms. I generally won't indulge before the beer hits ~50-55˚F. Any colder than that seems pointless.

    Macros like Coors with the commercials about beer at near sub-zero temperatures just is propagating zero flavor. Thats my opinion

    This is the best answer you will get. Try it cold and keep drinking til nearly room temp.

    I caught hell on another site for this but it works:
    Place a (cold, unopened) 12 oz longneck flat on the turntable in a microwave on hi for 10 seconds. Remove and let sit upside down for 5 mins. Remove cap & pour.
    I do this with Obsidian Stout.

    The stuff that is best warm is fine to drink out of the fridge as usually those are sippers and by the time you finish, they've long been room temperature.

    Just let the bottle stand out of the fridge for ten or fifteen minutes. =)

    If it's too cold and i'm getting some undesirable flavors, I'll just cup my hands around the glass for periods of time and use some body heat to warm it up. This works most of the time at bars. Works best when used in glasses with a stem because it's easier to get your whole hand around.

    I usually put it in the fridge, take it out, and take one sip of it cold. If I'm getting good flavor out of it at that point, I'll start drinking slowly (because I'm impatient), if not I'll let it sit for a few more minutes. In either case, I like to see how beers change as they warm, so I usually won't let them start out at room temperature (unless I'm particularly in a rush to drink).

    I drink everything but Heady Topper at room temp.

    Lagers/IPAs - Take out of the fridge and drink.
    Stouts - Take out of the fridge and drink slowly.

    Shouldn't be more complicated than that...definitely keep the microwave out of the mix.

    If they're a big barrel aged version I prefer it at room temp or at best maybe 15-20 minutes in the fridge prior to opening.

    I just did an Obsidian Stout. 12 seconds is the limit. You must let it stand upside down (the longneck should stand on it's cap without tipping over) for 5 minutes minimum after microwaving. This allows the beer to settle down and distributes the warmer beer in the neck of the bottle up into the cooler beer in the larger part of the bottle. (warmer rises)
    It's a good idea to pour immediately (within 1 second) after uncapping because although I never had one gush, you might get 2/3 inches of foam come out. (the foam doesn't come out immediately, it takes a full second or two)

    My microwave is 1000 watts and has a turn table. I wouldn't try this with a Belgian. I've only done it with American stouts and IPAs.
