3F Oude Geuze Cellaring

    I just cracked and tasted a 2012 Oude Geuze from Fonteinen and it was delicious. I was thinking of going and getting a case to cellar, but was curious how the flavors evolve with age. So for those who have aged bottles for years and tried one, how do the flavors evolve?

    The acidity tamps down a bit after a couple years and the flavor smoothens out and lengthens. I'm struggling for vocabulary.

    This is a wonderful beer. In fact, I just pulled one to drink thanks to this thread! However, this is also a producer and a geuze that does age well, despite my current "propensity towards fresh is best." This is a great geuze to watch change over the years and one of the few you can actually treat a bit like wine. Whether or not it gets better is personal opinion. My fundamental conclusion here is that this is a geuze that you can cellar - I like it whenever I try one. I've had one recently from 1998 and I thought it was definitely a good drink and a good experience.

    Great. I went and got a case for my birthday. I think i'll drink one on my bday for the next 12 years and see how it evolves. Appreciate the feedback.

    I recently had a 2001, while it was smooth it was definitely too metallic for my personal taste. It's still incredible to drink a beer that old and be enjoyable. Cheers,

    I have heard a couple people say they prefer 3F stuff relatively fresh, whereas Cantillon and Tilquin are universally considered great agers. I have no personal experience to back that up and plenty like 3F aged too so it's worth doing I think. I have 5 bottles I've been sitting on and will for a few years at least.

    I had the opposite experience with the 01 I had in early January, it was extraordinary. I much prefer aged 3F geuze to fresh, just my two pennies.

    How would people have formed that opinion about Tilquin?
