It's a toss up between Rochefort 8 and 10. Both are World Class in malt/yeast complexity.

There were Russian Imperial Stouts, then there was Courage! That Stout is in a class all it's own!

Block 15 Demon's Farm is probably the most complex I've tried. The first sip yielded "Wow, that's got a lot going on" from both of us that shared the bottle. Great beer.

Also, Baller Stout. It is the hot mess you'd expect from 4 world-class imp stouts mixed together, and it's damn good.

Another vote for Trappistes Rochefort 10. I think this is the best beer Ive ever had.

Without a doubt Ballast Point Indra Kunindra. I would not have thought those flavors could work in a beer but somehow they did.
Edit… Just saw Carlitos92 mention it also above, so guess it's not just me.

Probably Consecration by Russian River. The various yeasts and bacteria and the Cab barrel aging makes a very interestingly layered flavor profile. Lot's to find, and you don't have to look hard for it!

Suck and nugget nectar are incredibly balanced and also drinkable and delicous, id rather have something balanced and drinkable then overly complex.

BP Indra Kunindra is by far the most interesting beer that I have enjoyed so far.
