Sometimes when I'm drinking a beer (I first noticed this with Backwoods Bastard), if I just sip it and keep my mouth closed but my tongue down and away from my palate and just let it savor there, it tastes better but when I put my tongue on my palate, some off flavors or more booziness/metallic notes come out (just examples)?

    I think I'm just weird.

I'd think it's socially acceptable with beer and wine, liquor. I do it myself. But when my dad does this at every single sip of his soda, it can be just a little annoying. But that's his thing.

That isn't weird. Know what's a weird drinking habit? People that drink expensive, well-made alcohol they spent their hard earned (allegedly) money on into a bucket.

You're a freaking paragon of normalcy compared to those wackjobs.

I would speculate that it has to do with saturating the taste buds on the tongue, or maybe some change in the receptors caused by the pressure. Admittedly guessing, but I remember vaguely from sensory training many years ago that you tasted different things with different techniques. So no...not crazy and do whatever works best for ya.

Long story short, your tongue has different sections that perceive different types of flavors. My undergrad anatomy/physiology book maps it out as Sweet at the tip, Sour at the sides, salty in between, Bitter in the back, not much in the middle.
Without pressing it on your palate, it's likely gliding through the parts that are sensitive to sweet and bitter (balance) and not picking up on the rest. From then on, it just becomes a preference in taste. Nothing wrong with him and no solutions needed.
