Feeding off your cellar.

    I recently took my car into the shop, needing a bunch of new stuff to be repaired, which is going to deplete my checking account. I won't be able to go out to beer bars for a little while or go out and buy fresh ipa's to have in the fridge, leaving me one option: feed off my cellar.

    It's kind of cool to look forward to actually drinking some of the great beers I have been sitting on in there, but scary knowing they'll all be gone. NOOOOO!

    just wanted to see if anybody else has taken a big dive into their cellar recently or been in similar situations.

    Yup. Do the exact same thing. If I'm running low on funds, it's time to dip into the cellar. I'll also maybe brew a relatively cheap every day beer (like a pale ale or stout) which will only run me $20-30

    I've kind of had to recently. Things got a bit out of hand (too many beers in the cellar), and I've really tried to refrain from buying new beer...opting instead to just dip into the cellar. Beer are meant to be enjoyed, and that's exactly what I've been doing. Then again, I'm also still staying at net zero since I'm adding more to the cellar constantly. I also am trying to drink as much New Glarus that I have stored right now because I'm going to WI next week (and again in June). It was sort of scary at first, I can cop to that! But my friends love it!

    I'm planning on moving sometime this year, and looking around and nit really wanting to move all that beer, I have been heading down there a not more often, digging out things that I may not otherwise crack into.

    Cleared my cellar out over the course of a year in 2007-2008, and never reestablished one. Drank everything after I realized I had a ton of great hard to find beers that were doing no good if I didn't actually enjoy them. Some of them I realized had even spoiled. So they were a total waste.

    Drink beer is my motto nowadays. I never have more than 7-10 bottles on hand anymore.

    I pretty much stick to my consumption rule. Anything worth cellaring stays there for a year, after which I add it to my "drink now" list. Once a cellared beer is added to the "drink now" list, it stays in the cellar until the night before it comes up on the schedule, at which point I put it in the fridge. That way, unless I acquire a ton of cellarable stuff, I keep the cellar turning over.

    Only problem is, now I'm sorta running low on my "drink now" list; just 14 on there, while there are 21 in the cellar. Hope there are a bunch of extras in my beer mail this Friday to replenish the "drink now" list. In case anyone was curious, my last addition to the "drink now" list was a Black Albert, which I added on April 4th. I won't be adding anything from the cellar to the "drink now" list until the end of June, at which point Uncle Jacob's Stout, Older Viscosity, Angel's Share, and Bomb! get added.

    I’ve always found that drinking a great beer is far more enjoyable than having a great beer in storage.

    Enjoy the fruits of your labor. You’ve earned it.

    And don’t worry about what’s gone. Just think about all the great beer that’s coming your way once your checkbook recovers. And how lucky you are to have a great beer in your glass right now.

    I can relate to a certain extent, however my situation was with wine. Too many older vintages collecting dust and not getting any better. Over the last 5+ years or so I have tried to bring out these wines much more often. Fun times popping open a couple of them and enjoying the compare/contrast thing with good friends over a meal.

    I don't mind drinking the odd beer out of necessity, but much prefer to collect and hold where possible.

    I mean what am I going to look at on a Saturday night if I have no cellar?!

    I save them for sharing with good friends. I've gotten way better at self control, I didn't even drink a single beer yesterday and I don't plan on drinking one today either.

    I am in the same boat as many of you. There are several things in there I want to drink. It helps that my shelves have a limit of about a 100 bottles, which I have exceeded. I am trying hard to not buy much so that I can start clearing space.

    The last time I moved my cellar was a wake-up call. I made a New Year's resolution soon thereafter to drink more beer. Tick that off the list. (I've kept buying beer, though, somehow.)

    The really good stuff has not been touched but I do raid it from time to time, remove a few bottles, especially if the budget is tight.

    I periodically drink off my cellar every year or so. In my early days of cellaring I found that most beers fall off fast after 1-2 years.

    What I have been doing for the last 3 or so years is to buy a bunch of good shit in the fall/spring when the stouts/barleywines/ bigger beers are in season. Then I drink them over the summer/fall and repeat.

    Right now I have 200 bottles to drink before 2015 which is higher than normal but it should be manageable as long as I can stay away from cases of imperial stouts and bigger beers in general.

    I have found that to cellar for me is to find beers that don't go bad in a year which may be different than how much of you guys look at it but I got tired of tasting oxidation on otherwise great beers.

    Drink that shit, its beer not Pokemon cards.

    I lived overseas for a year and came back without a ton of cash. Needless to say, I started working through my cellar to cut costs. I essentially drank for free for 3 months while I job searched and waited to move - I bought 2 12 packs of fresh IPAs during this time and that was it. It proved to me that cellaring is awesome if you can drink the beers on time, and also kind of sad to see how much money I put into collecting beer over a couple years' worth of time.

    Ever since I have returned, I keep 1-2 six packs in my fridge and don't accumulate anything, unless it's in the lambic family.
