    This will all cellar very well I have had the Belgian Red and Raspberry Tart 2 years after bottling and cellared properly. Both were as good fresh but noticed not much change with age. So drink fresh or wait to open with great company. Either way, you will enjoy them!

    I just traded for them in February. I probably won't sit on them for too long, just need an excuse to drink 'em. Cheers!

    You appear to be one earthquake shy of sadness. I hope you bolted the shelf to the wall and maybe add some walls to keep them on the shelf.

    It's difficult to see in the photo, but each shelf has some strong wire going around the outside, which should keep the bottles in should any shaking occur. The top three shelves also have some netting from the shelf base to that wire, which should prevent any smaller bottles that might tip over from rolling out and down. And yes, the shelf is thrice secured to the wall behind, though you can't see those mount points.

    Cellar v.2, drank everything after I moved last year and now that I'm back in WI started rebuilding thanks to NG fruit beers, crown jewel is the old stock vert start at 2003...holding out hope for finding a 2002 or 01 before june gets here when I plan on drinking it with a group of friends

    My mom was gonna throw this cabinet out, so I decided to re-purpose it.
    Just hope I don't have any random bottle explosions.
    (Everything I have has been accumulated since November and will be consumed within the year)
    My next step is getting an actual fridge so I can cellar stuff for longer.

    Here's a couple pictures of my winter project, building a real cellar in my 32x24 shop. Exterior, shown without the cooling unit.

    And the interior, already full. The white square thing in the back is a ceramic heater, since we do sometimes get freezing temps in Oregon. Both AC and heater are run off one dual stage temp controller. Back left is a wine rack for the lambics. Interior is all cedar.

    Some nice looking cellars, I'm in the process of building mine now in my basement. What's the preferred temperature and humidity level?

    I'm no expert and I'm sure there are more knowledgeable guys in this thread who could answer this, but like you I am starting my cellar too. From what I have read so far, people have varying opinions about cellaring. Since I am just getting started I am living by the code of keeping your beer upright in the coolest, darkest place you can so that no or little sunlight can affect the taste and that no large temp fluctuations occur, which also can effect the beer. With this method I'd say sitting on a bottle 1-2 years would be fine. 3 or 4+ years you would want a more controlled environment like cellaring it at it's proper temp. The proper cellar temp for beer depends on the type of beer. You would want to cellar it at the recommended serving temperature (someone correct me if I'm wrong), which is usually located on the side of the bottle.

    I have a buddy who has probably $1,000-$2,000 invested in his cellar as far as beer, and he just keeps everything in his hallway closet. He told me <65 degrees and no sunlight. So if he's invested that much into a pretty unregulated storage space, I should be fine with the collection I have so far.

    My recommendation, and I think I've read this on here, is to start off small and age for a year or two to see if cellaring is something you actually like and can afford. That's what I am doing anyways. Best to only have $300 or $500 invested if something were to go wrong versus accruing a massive beer cellar in a location that is less than ideal to age beer properly.

    That's good advice, I can see this quickly becoming an expensive hobby.
