Do you include the sediment at the bottom or no? Why?

I pour the top half first, review it, then pour the bottom half.

Pour 2/3 in glass for review purposes and chug the rest out the bottle. I'm both sophisticated and trailer trash at the same time, like a walking oxymoron.

I stop pouring before the sediment comes out - generally it doesnt change the taste but the visual appearance is not appealing. If you don't care about what it looks like pour the whole thing I guess?

Straight down the middle. No messing around. Whatever's in there, I want it in my glass. No tilting. No BS!!

I just pour the whole bottle in the glass.

I find that it makes a big impact on the taste, so I drink it separately.

Sometimes I also swig out of the bottle, but in a more refined mood I'll use a little cordial glass to pour it in:

I pour slowly with my glass at a 45 degree angle. I stop pouring when I start to see the beer get cloudy. Drink what's in my glass. Then pour the yeast and kill the swill.

I pour slowly or decant it without any glugs to disturb the sediment/lees at the bottom of the bottle. The bottle conditioning yeast used by several breweries is often not the yeast used in the original fermentation of the beer. I find I often don't much care to have that secondary yeast in my beer as it changes the flavor of the beer away from what was produced by the original yeast in ways I often don't care for. But if I'm in the mood to drink the sediment I'll save the bottle with some liquid in it, then swirl and pour it separately into a smaller glass to have on the side as a quick shot of beer and yeast. Otherwise I rinse out the bottle, discard the sediment and put the bottle in the recycling bin.

Pour the bottle slowly and carefully into the glass, then drink the ass end straight out of the bottle. Works for me, I reckon.

Curious. How old is that Sofie and whats the oldest bottle aged Sofie that you've had? I'm currently of the opinion that for my tastes Sofie may well be the best tasting Saison made in the US right now.

It really depends on how much sediment is in it. If it's homebrew though. Absolutely not.

Just had one today and the difference in color between the first and second pour was enough to make me understand that the right way is this way.

I home brew so this is 75% of my beers. I pour until im about to dump the sediment, then chug the remainder from the bottle.

I've had many repeats of the same beer, but some have floaties and some don't. I used the think the bottom yeast was nasty to look and it lost points on my ratings of the beer. Now I just don't care anymore and have gotten used to them.

I usually use my hands. Unless I've already had 5 bottle conditioned beers in the past hour. Then, I'll use my feet for the 6th one.
