    Will this taste like crap?
My homebrew store is out of wheat and pilsen. I'm not interested in making other styles at all, I really can't anyways with my setup unless I want to give up a lot of volume.
Ehhh maybe I should just make a hoppy pale with 6 lbs of two row and...idk...Amarillo and Citra.
But if I can make a 2 row berliner, I mean how would that change the taste? Really bland berliner with just sour? Might work for a fruited one, but I really have no idea.

BW is a wheat beer. It should have a bready aroma and taste of fresh bread. You won't get that without wheat.

So it would be just a bland base, none of the sweetness of the wheat. Hmmm.
I'm imagining something like American Sour now. I might just go for it and see what happens, a fruited american sour.

It'll be fine. I bet you'll be hard pressed to tell much of a difference.

Some others are suggesting subbing the pilsen with 2 row and the wheat with MO or Vienna.

As an aside, what kind of LHBS runs out of pils and wheat?

A pretty small one that is also a brewery. I love them though, no grain shortage could change that.
I've talked on some other forums and decided to go with 85% 2 row and 15% flaked oats.
