How many cellar-ers ...

    I'll either throw big stouts in my cellar as I know I will not be able to take a 750 of 19% down by myself or throw some of my favorites for special occasions. I'll be drinking my whale (Fuzzy) in less than a month for my birthday.

    I've got a good group of guys that enjoy beer as much as I do, and I like to open most of the really special stuff in my cellar for when everyone is around and can enjoy it. I like to hear everyone's take on certain beers. Plus, who is really able to sit and drink an entire bottle of Dark Lord by themselves?

    I represent this school of thought as well. I definitely don't open 22 ounces of barrel aged stouts to my own face too often, but I try to have a mini bottle-share on a bi-weekly basis with a few friends.

    Mostly, my "cellaring" is the result of an issue hitherto undiscussed in this thread: My girlfriend and I brew more beer than we can drink!
