"Off" flavors you enjoy?

    So I had an experience with a local Oktoberfest that had a distinct acetaldehyde (green apple peel) characteristic and fruit esters which would make it out of style (I dutifully noted and deducted in my review).
    The problem? I liked it.
    In fact I like the taste of diacetyl in some circumstances too.
    Is there an easy way to find what, if any beers it is acceptable to find these flavors in? Or are they too unstable to replicate and maintain consistent results with?
    So advocates are there any off flavors you like sometimes when you find them?

    I don't mind some of the more harsh Brett phenolics . . .

    I like diacetyl, too- as long as it stays below a certain threshold- especially in porters and stouts.

    I like that 'buttery' off taste in a few beers too, and I also like that petrol smell/flavour you get from aged German Rieslings and certain hops from time to time.

    Well I don't think I am going to find anyone who likes skunky or bandaid beer flavors but I am glad I am not the only one who likes diacetyl (within reason!) in porters and stouts. I think it goes great with anything nutty.
    And I really did like acetaldehyde and I can see the appeal of brett (I think I am the only one who is on the fence about this flavor, I've only found it once)
    My reaction to my first brett encounter was "Woah that's...different. Hello brett!"
    My husband said it was the grossest thing ever. :stuck_out_tongue:

    While I don't necessarily think it's an "off" flavor (though others probably would), I very much enjoy the strong whiff of SO2 in a young lager.

    Not a true off flavor, but I love the onion flavor in certain hops.

    Devil Dancer comes immediately to mind, smuttynose IPA used to have it occasionally but now with the new plant.

    I don't mind band-aid flavors in beer. It's not like I find that very often, but it doesn't bother me at all.

    People complain about metalic tastes in lagers, but I happen to love them. Obviously I'm not looking to drink a liquified soup spoon, but that metalic edge is something I enjoy. Though, as I write this, I'm not sure that's an "off" flavor at all, I think it should be there.

    absolutely. can't think of any specifics offhand. style-wise, i want all mouthfeel either 1) bone dry, or 2) silky and creamy. this would be off for many styles, but i'll take it anywhere i can get it. high ibu usually that way too; i have a pretty bitter palate.

    diacetyl and such i'm usually not into. a beer not fermenting as cleanly as intended can definitely be good though.

    I might've given you some hell last Sunday, but you have to check out Cuvée Van De Keizer Blauw. It has the green apple off flavor acetaldehyde. It also works with the"toffee" and caramel notes. Very good stuff.

    When appropriate I don't mind oxidation like in aged barleywines and stouts

    Columbus hops too. Lagunitas IPA is one that comes to mind that uses these.
