Looking for beers crafted in unique ways or brewed with ingredients that are somewhat "exotic" in the beer world.

I've personally found a few that I enjoy but, Ballast Point - Indra Kunindra really stands out.

    I loved Stone Punishment.

A LOT of my favorite beers are "weird/unique", it's those high-concept brews that usually stand out to me on a menu or a store. I'll come up with a good list later!

I don't have an answer but I do have a piece of advice. Don't use 'weird' to refer to craft beer. It makes you look like a macro drinker.

Not really. Its a word that anybody can use, not just macro drinkers. I have some advice for you, don't sound like such a beer snob.

Chili pepper in beer is weird to me, and not in a good way.

Lucid Dreams from OddSides is probably mine. Wine barrel aged beers are weird to me.

Putting chiles in beer is no laughing matter.

I really enjoy Yards Tavern Spruce Ale. It's literally like drinking a Christmas tree in a good way.

I don't see many beers made with jasmine. I love it.

It is weirdly enjoyable, even as I'm sneezing from the flower pollen in my beer...

Indra Kunindra is a good choice for this question. So is Elysian Jasmine.

But in the interest of being different, I'm going to go with Boulevard's Tripel Julep--their Long Strange Tripel that was aged in whiskey barrels for a few months and infused with fresh mint leaves. It was a pretty polarizing beer, but I enjoyed it quite a bit (+15.6% on my rDev). Also, staying in the herbal-infused beers theme, Odell's Fernet-Aged Porter was pretty out there.

It's funny though... it seems like the standard for "weird" is only going to get more and more extreme as brewers continue to push the envelope. 5-10 years ago, a beer brewed with wine grapes/wine must would have been weird, now you have several on the market (Odell Jaunt, Boulevard Entwined, DFH Midas Touch, Sixty-one and Noble Rot, Deschutes/Goose Island Class of '88 Belgian-Style Ale and more that I'm drawing a blank on right now...)

Funny you say that. While my dad loves all the beers I drink, he refers to my beers as "exotic." I had to correct him on this.

That was exactly my point, but apparently the OP didn't understand it. I [and I thought many others but not the OP] have macro drinking friends who call my beer "weird beer".

I like chili beers in general. Even the so-so ones really do it for me.

Good candidate for exotic/unique. Personally, I had a tough time with that beer last year and did not finish it. Going to give it another chance this year.
