    Anybody brewing this weekend? I am currently trying my hand at making 3.5# of Belgian Dark Candi Syrup using a 4 sugar blend, citric acid, pickling lime, and yeast nutrient. Inverting now, then taking it through a few high temp steps. Wish me luck.

    No brewing. Lots of drinking, and I'll be "de-barrelizing" my brown ale. Yes, I made that up. Gonna keg the brown ale from the bourbon barrel, so it'll be carbed and ready to go for Thanksgiving.

    I used an Irish strain. It came out epic, but lacking oak.

    I'll be brewing up a big Quad to go on the yeast cake from a dubbel I'll be transferring to secondary. Hoping to have something that will hold up well to some aging. Planning on letting it go about a year and see how it mellows out.

    Just finished a Celebration Ale clone that turned out pretty disappointing. I want to have something to bring in to the office holiday party next month, so I'll be brewing an IPA over the weekend. It's a kit for a DFH 60-minute IPA clone, but with the hops mixed up a bit to match Smuttynose Finestkind. Came out great last time.

    No brewing. Maybe keg a couple of beers that were brewed over the last few weeks: a Coffee Oatmeal Stout and an ESB. I need to make sure the kegerator is locked and loaded before the family, and in particular the younger bros, arrive for Thanksgiving.

    I have two starters going, so I guess I am making two beers tomorrow. An IPA and strong Scottish/winter warmer type.

    I am going to make another PA/ session IPA using 1oz. magnum for bittering, and 2 oz. citra for aroma and flavor. This turned out awesome the last time I brewed it. A nice citrusy and grapefruitty brew.

    Couldn't waste all that ooey gooey goodness in the pot, so I added water, DME, and some hop pellets. Will ferment the 1/2 gallon on some Belgian yeast to see what it tastes like.

    I was going to brew a Rye Porter, but that's on hold until next weekend. My basement renovation has taken much longer than planed (still not done), and I am beat.

    I will be putting my Rose Hip Tripel on tap...finally, kegging my Imperial Stout, and bottling some wine.

    I made a repeat batch yesterday of my first original recipe, a Pumpkin ale that turned out amazing. next week I'll be making another batch of my favorite RIS, using a clone recipe from Old Rasputin.

    tomorrow plan to ski in the morning then fire up a split boil: irish red/irish dry stout, pitching windsor yeast for both.
