That Tempting Cellared Beer

    What beer do you have in your cellar that you are aging, but poses a serious issue to your resolve?

    For me, it's Enlightenment's Transcendence. Bought two bottles, one to consume fresh and once to age for almost a year as my Patriots' opening day kickoff for next year. Kills me every time I open the door to the closet in which it's being stored.

    I have come to learn that cellaring is nothing but an extreme exercise in self-control. And it gets pretty hard sometimes. :grinning:

    I have a 2010 World Wide Stout that I traded for and I was told to wait five years til it's at its peak. That was over a year ago and I have another year to wait since it came out in December....it's burning a hole in my cellar!

    There's quite a bit, actually. With some things I bought multiple bottles, with others full cases over the years (Mother Of All Storms), I have four vintages of MOAS and would love to do a side by side with a big group just to see how it aged. I think the worst of the bunch is three different vintages of Utopias, every time I say I'm going to open one, I don't, the stuff isn't getting any younger and neither am I. Drives me crazy, I have no idea what I'm waiting for!!

    I try to cellar things, but I am weak. The only time I drink aged beer is when I find something on the shelf at the liquor store that's been aged for me. :slight_frown:

    I've got many beers that are just aching to be consumed but I think my bottle of Aaron from Hill Farmstead is the most tempting one!

    A Thomas Hardy 2008 I am aging for my sons 21st....it is just really tempting.

    Basically everything because when I want to go nuts, I've got nobody to share with. Not many BA's in Marin County

    When I get the urge to open something I seem to extinguish the flames by buying another beer or two for the cellar.
    Still the Rare Barrel Sourtooth Tiger is relentless in her sultry advances for my lips.

    Same here...I put together a bottle share about once a month, but there's really only a few people here that I would even consider sharing some bottles with.

    I don't have a cellar, but I do have a box in the closet. I keep a few things in there that I want to save for Christmas or a special day or whatever, but I don't really age much. I set aside a 4 pack of BCBS last year so that I can open one each Christmas for the next 4 years and I hope to continue that tradition for a while. Other than that, I'd rather drink stuff than die with a crazy collection that someone else gets to enjoy.

    For some people, it's more exciting to have this great collection to look at. I get that, to some degree. But I'd rather have a tiny cellar and a bigger list of beers I drank.
