Check out "Vintage Beer" by Patrick Dawson. It breaks down the scientific process of why beer ages and he gives detailed info on how long to age different styles of beer. He even goes as far to detail 10 year verticals of specific brews and does a year to year breakdown on when to expect different flavor profiles to change and when to expect a beer to decline.

In the back, there is even a section on cellaring temperature, different options for cellaring, using spreadsheets/beer cellaring apps, and more.

I picked the ebook version off Barnes and noble for $1.99 a few weeks ago. I believe the hard copy runs around $10.99 and can be found with a quick google search. Definitely check into this book....it's an instant classic!
