What's your fantasy brewery lineup?

    If you had your own brewery and got to make any beers you want, no matter the cost or if others liked them. What beers would you make?

    1 - Mexican Chocolate Stout - Chiles, cinnamon, milk chocolate and vanilla - fairly high in spice - medium mothfeel - 7-8% ABV - 4 pack 12 oz cans

    2 - Columbian Mexican Chocolate Stout - Chiles, Cinnamon, Dark Chocolate, Columbian Coffee, Vanilla and Nutmeg - Vanilla and Nutmeg balance out the bitterness of Coffee and Dark Chocolate - Very thick and chewy mouthfeel - 10-11% ABV - 24 oz Tall Can

    3 - Imperial Peanut Butter Milk Stout - Creamy feel with sweet Peanut Butter flavor - 8-9% ABV - 4 pack 12 oz cans

    Styles 1-3 also come Bourbon Barrel aged without being overwhelmed by booze or Bourbon flavors - Served in 24 oz Tall cans

    4 - Sour Cherry Brett Wild Ale - Sour refreshing cherries with a moderate Brett funk - 6-7% ABV (spring) 4 pack 12 oz bottles

    5 - Cherry Lager - Flavor of Sam Adams Cherry Wheat in a light Lager - 4-5%ABV (summer) 6 pack 12 oz cans

    6 - Oktoberfest - Traditional refreshing German Marzen with lots of nice malts - 5-6% ABV (fall) 6 pack 12 oz bottles

    7 - Winter Warmer Brown Sugar Oatmeal - Full bodied Winter Warmer with lots of sweet roasty brown sugar and oatmeal - 8-9% ABV (winter) 4 pack 12 oz bottles-Also comes in 24 oz Nitro Tall cans

    8 - Dunkel - sweet and refreshing German Dunkel - 5-6% ABV 6 pack 12 oz bottles

    9 - Mexican Rice Lager - Like a Modelo and Budweiser mixed - 4-5% ABV 6 pack and 30 pack 12 oz cans - also available in 24 oz Tall Cans

    10 - German IPA - fresh citrusy IPA mixed with German Pilsner like qualities - 6-7% ABV 6 pack 12 oz bottles

    11- Sour Brett Barnyard - Lots of barnyard and bandaid funk balanced with lightly fruity sour - 8-9% ABV .750 ml bottles

    What would you guys like to do at your dream brewery?

    I do have my own brewery and make whatever I want. Mostly Pale Ales, BA sours, and the occasional malty beer.

    Pumpkin Peach Ale, BA Pumpkin Peach Ale, Pumpkin Peach Ale with Chocolate, Pumpkin Peach Ale with Vanilla Bean, etc.

    But seriously, I think I would do something similar to what Boulevard is doing with the Stout X series. I can never get enough stouts, so I would make one great base and then do tons of variants.

    BA old ale/English barleywine
    Scotch ale in pint cans
    Fruity IPA and piney IPA
    Dubbel and tripel
    Spiced holiday quad
    Maddddd brown ales!
    Rauchbier
    Some sort of fruity strong ale- mango or passionfruit maybe?
    Wicked strong Russian stout. No weird flavors.

    If you owned a brewery, what handful of styles would comprise your core lineup in the tasting room? Here are mine:

    • German Pilsner
    • Standard (not hopped up) Pale Ale
    • American IPA
    • Double IPA
    • Coffee Porter
    • American Stout
    • American Strong Ale (an underrated style, IMHO.)

    Rotating Seasonals:
    • Fall: Imperial Pumpkin Ale
    • Winter: Spiced Imperial Dark Ale
    • Spring: Barleywine
    • Summer: Hefeweizen

    On the idea that you should brew what you love, I'd lean towards stronger styles and call it Big Hitter Brewing, or some such.

    American Barleywine
    DIPA
    Belgian Strong Pale Ale
    Tripel
    Quadrupel
    Old Ale
    Russian Imperial Stout

    I'd also buy a share in a taxi company, because nobody could drive home from my brewery.

    I certainly would stop in and try your American Strong Ale, a style that flies under the radar, with the exception of Stone's poster-child.

    -american pale ale
    -american IPA
    -double IPA
    -hefeweizen
    -russian imperial stout
    -czech pilsner
    -american red ale
    -kolsch

    fall - marzen/oktoberfest
    winter - brown ale
    spring - witbier
    summer- gose

    i'm ambitious so i would try to do my brewery big. i'd have a yearly IPA/dIPA made at the same time each in recognition of when i began my company.

    and don't worry, this is more than just a dream.
