Cellaring Do's and Don'ts

    I've recently set up a place in my home to cellar some beer and am really looking forward to what some time will do to the beers I have in there. I read this article about cellaring and it seemed pretty good so I thought I'd share it and see whether those of you who have been aging beers agree or disagree...

    I would add, "DON'T go into cellaring beers with high expectations."

    i think you can age american barleywines, ie Bigfoot

    You can but the hops oxidize into a mess after a few years with most. Bigfoot being more of an Imperial IPA it doesn't ever reach a sweet spot before falling apart from my experience.

    I love it fresh and I love it equally with a few years on it. I've found that two years is a great spot for it. The reason I disagree with the increasingly common assessment that it's a Double IPA is that it's got a super high perceived bitterness, but I don't actually get a ton of hop flavor. More intense bitter and pine balanced by the robust maltiness. To me as it ages, the hops do indeed oxidize out some, but in fading bitterness, as opposed to loss of hop flavors (like floral, citrus, etc.) and the malt character grows.

    Do cellar what you want.
    Do enjoy what you want, when you want.
    Do take peoples advice with a grain of salt.
    Do share with friends - those are the beers you'll remember - not because of the beer but because of the company.

    Don't listen to what everyone tells you.
