We all know that hoppyness fades out over time, question is do (American)IPAs when aged end up turning into pale ales? I mean do they reach a certain point where the hop level is that equivalent to that of a pale ale?

Some APAs are really IPAs and some IPAs are really APAs.

The more delicate hop flavors fade, but that doesn't mean IBU's fade. Nor does it mean ABV fades.. "hop level" is a bit abstract. A pale ale certainly isn't classified just as a stale IPA.

I think they turn into what the imperial British enjoyed in India for the time period after the long sea voyage. At least that's what I told myself as I choked down a lagunitas sucks that was over a year old. So, I would say no. They just lose their hop presence. Pale ales still have a hop presence.

The answer is 'No.' Hop oils break down and oxidize over time...so the more hops that are contained in a beer, the more volatile it is. Therefore, do not rank a hoppy beer in terms of age. A 6-month old DIPA is going to taste more oxidized than an IPA and even more so than a Pale Ale at that age.

Hoppy Beer = Drink Fresh...~90 days from bottling is best (when stored under proper conditions)

Then barley wine turns into mild ale with age. Everybody knows that. Just as German pilsners turn into Czech pilsners over time.

We need to start a master list of the breweries that use the "magic" bottles that turn a beer from one style into another while in said container. That's some sneaky shit right there, and we have a right to know who's going all Harry Potter on us.

Wish more brewers would put date on bottles. Stone does-sculpin used to-six point used to put a more legit date on there packs, but the dates are meaningless now

Its becoming a given really now. And it does vary depending on the beer. These days they realize this is a given for the craft geek. I can't say a bad thing about Six point. Love em. I'll try one of this Resins in June and find out....

IBUs do not fade with time, just the hop aroma and flavor. Old IPAs generally take on a barely wine-ish character still bitter from the hops but very little nose and more malt forward

Silly questions like these are why I throw out the "india" prefix most of the time, as well as "double". They're all pale ales, just some are stronger than others and may or may not have more hops.
