When to add peppers to beer

    I am all out of chiles after buying some fresh roasted Hatches a couple of Summers ago...will be stocking up again this Summer : )

    Sadly not yet. I have had Bomb and other local peppered offerings which brings me to my opinion, I agree sweetness should be balanced but not with capsaicin.

    I don't make pepper beers, generally don't love them, and often don't even bother to taste them. But yesterday I tasted a pale ale at a brew club meeting made with Habanero and Mango, and it was quite tasty. Was it bettered by the peppers? I dunno, since I didn't get to taste the base beer. But it was at least mor interesting than a typical pale ale.

    I made a pepper porter. I put a seeded chipotle in the primary a week after brew day, and left it in for two days. It still didn't have the burn I wanted, so when I bottled I took some advice I got on here and added a homemade tincture made from habanero's tequila, vanilla and chipotle.

    The flavor and heat is just right. I screwed up on the priming sugar though. :slight_smile:... I'm letting it sit to see if it carbonates, and may try to fix it if not... Tastes great otherwise!

    Dead wrong you are. A mole porter I brewed well over a year and a half ago still has some people I gave bottles to talking about it and trying to dissect it. Had a slight bite on the front of the palate and a smooth warming feeling on the back, and was disgustingly drinkable in spite of its high abv.
    For the OP, I soaked my peppers in a Reposado and used a portion towards the end of the boil, and during secondary.

    Prairie just claims they use peppers. I have never tasted em.

    Exactly, but no I don't really have a problem with coffee because its in some classic styles and the flavors resonate with caramel and roasted malts, what I cant stand is when people put things in beer to not make it beer anymore and I see their threads everywhere Ketchup in beer? Root beer beer? birch beer beer? call me old fashioned but I don't even think fruit belongs in beer I think fruit flavors should come from a careful selection of hops and esters from the yeast

    Heh heh... don't get me wrong, I hear you. There are ingredients used in beer these days that to most palates really don't work very well. Fortunately, to those of us who love hot peppers, they actually match up really well, with dark beers in particular I think. Taste and see. Some people just hate peppers, and that's cool. They're a love/hate kind of ingredient.

    I like to keep an open mind. Like Andrew Zimmern says, taste everything twice. If you don't like it the first time, try it again anyway, because you might change your mind. If you don't like it twice, then, well... we need to do what makes us happy. :slight_smile:

    If history is your important criterion, I think you'll find fruit was used in beer long before coffee. But which "classic" styles have coffee in them?

    I actually like some beers with coffee...just trying to understand your POV on it being okay because it's "in some classic styles".

    I think we can find common ground. Beers made with the basic ingredients are less likely to disappoint me than those that are off the wall. But I have also found some beers with the odd ingredient that I rather like. I am much fonder of fruit beers than you, apparently. Not sure what that says about my gravitational field. FWIW, I have enjoyed a few coffee stouts but am not ready to concede that there is a classic style with coffee in it.
