Cellaring 2015 Blushing Monk?

    I was wondering if this is a drink fresh beer or can it be cellared say 6 months or more?
    I doubt mine would last that long before I drink it but was wondering if its best to drink it ASAP?

    I'm guessing it will age very similar to the '11 release and be good for 2-3 years. I bought a couple extra myself.

    Everybody started drinking their '11 when the '15 came out....rave reviews.

    I just drank my second bottle over the weekend, which tasted great, and plan on saving my last 2 bottles for a year or two.

    People wouldn't have aged the second batch if the first batch wasn't so agreeable over time.

    Well its good to know there is no real rush on this but seems to be a perfect summer time beer.

    Did a side by side with fresh and cellared for a couple years. Cellared was far superior. Sit on it for a while.

    Interested to hear your thoughts on why the aged was better.....i too am going back and forth on whether to drink fresh or cellar. I only bought one bottle due to price.

    I just thought the fruit mellowed out nicely. It did not dissipate appreciably at all, but it just really settled into itself.

    I'm not cellaring any. Pretty sure it's going to sit on the shelves for a while here. I bought a couple thinking that it was going to fly, but it's still on the shelves in bulk, so I'm going to enjoy my second bottle when the weather hits the 90's.

    Wish I could get one to cellar but had to get the one I have sent from PA.

    Had a 2011 and 2015 side by side this weekend. Definitely preferred the one with more age. Thought that the tart, jammy flavor that is really prevalent in the 2015 mellowed out to make for a more balanced glass.

    Out of curiosity, has anyone aged Rubaeus? I don't care for it fresh (too sweet and thick) but I wonder if it will mellow with time.

    I had a few bottles of 2014 Rubaeus left that I started dipping into and they hold up just fine! The rich raspberry pie taste mellows into a more tart tinged with sweet taste. I'd recommend trying it, I doubt you'll be dissapointed

    I remember reading a review that suggested this for an ideal accompaniment to Holiday season meals. I'm going to try to make a few bottles last through the end of this year and next.
