    That's been my impression (haven't had it personally), but the production process is pretty cool and definitely unique.

    Lets see.. no reason to be paranoid, if you sanitation is up to par.

    However, wouldn't hurt to have a second set of cold side plastics. Meaning.. thief, tubing, siphon, filters, yadda yadda. If you are inclined, even a carboy if it's plastic.

    I brew sours and keep my stuff separate, just bought new for the clean beers. Kegs I don't both with, but I do keep one tap line sour only as I'm too lazy to change/clean the line that often.

    Brett works slow, so a week each is too fast, IMO. Depending on recipe, FG and brett will get down to 1.006 and below, and at that point, you want to check it until there is no gravity drop, and it's consistent for 2-3 days.

    Fuck a secondary unless you are adding messy stuff. Hops? Add to the primary unless you want to save/reuse the cake and slurry for another batch, or bank it. Otherwise, toss 'em in!

    Brewing with Brett is a learn as you go, and learn with each strain. Not all are equal, and not all will get funky. They tend to like warmer temps, so I'd start at the low end of fermentation temp range for the strain, and allow it to free rise to the middle temp, and hold for atleast a week, or until it appears the bulk of fermentation is done. Allow to free rise to whatever temp it will get too, or even warm it slightly to help finish and get the brett to do it's work.

    Once gravity is stable, package it. Brett will evolve differently under pressure as well, so it will change as it goes.

    So my target is playing coy, like the dog he is!

    Final tally of stats I'll post before the actual fun starts:

    22 BA wants hit assuming I can get the two beers locally from @Mipper and @JNForsyth and the one beer I'm waiting for from the NE.
    17 stickers which was a wish list want
    1 wish list brewery hit
    Multiple local growlers which was a wish list want
    4 wish list beers hit

    12 day box is packed up and will begin its journey tomorrow. Mild weather this weekend so I'm not concerned. One beer that doesn't fit a styro shipper will be sent later. I actually feel a little bad that multiple days you'll only be required to drink 12.68 ounces.

    There is one more box of extras that'll go out tomorrow or Monday. It's currently got 230.5 ounces but there will be more added along with swag.

    • Clown Shoes Ohio Unidragon - We've officially entered the Locals Matrix. Brewed in Mass but sold only in Ohio.
    • Ken Schmidt Chocolate Mint Stout - Not sure why a picture of @Dave_Treat is on the bottle.
    • Moody Tongue Churro Chocolate Porter - Sounds interesting too. Never heard of the brewery.
    Next the hoppy stuff:

    • Trinity Super Juice Solution Sour IPA - No idea what a sour IPA is...
    • Trinity Red Swingline - But I'll have two chances to find out
