IIPA recipe help

    As an overzealous new homebrewer, I have been buying hops online faster than I can use them and I now have a surplus:
    Mosaic - 12 oz
    Citra - 8 oz
    Amarillo/Cascade/Centennial/Nelson/Simcoe/Zythos - 4 oz each
    Hop extract - 10 mL

    I would like to do an IPA/IIPA this weekend (6 gal) and would appreciate any hop suggestions. I'm thinking of a simple grainbill (BIAB): 95% 2-row pale, 5% C-40 with an OG ~ 1.070. Too late for a starter, so I'll probably pitch 2 packs of rehydrated S-05. My plan for the hops is to bitter 30-40 IBUs with the extract and use mainly Mosaic and Citra for late additions. What do you think? BTW, I have a version of the APA IPA bottle conditioning now, so I'm looking for something a bit different. Any suggestions are much appreciated!

    Sounds good. The hop schedule is so personal. I'd spread out the mosaic and Citra across flavor, aroma, whirlpool, and dry hop and enjoy. Seems like it this would be akin to Terrapin's Hi-5 IPA depending on hop utilization.

    Mosaic and citra are tasty together, but I'd also consider mosaic/cascade/amarillo or citra/nelson/centennial. These combos have been awesome for me in previous brews

    Thanks to all for the good advice. I have no experience with Mosaic although I really like Lone Pint's Yellow Rose, which is apparently an all Mosaic IPA. I'm not trying to mimic anything specific, just hoping to make something with a bit of complexity (fruity, citrus, dank, pine, etc.) with my available hops. I've read other threads and I am looking for opinions on which of these hops play well together in your experience. No matter what, I'm sure I'll learn from whatever I make, which is the best part (aside from drinking it, of course).

    If you don't have the grain yet, I prefer C20 vs C40 for an IPA/IIPA.

    Citra, Amarillo and Centennial play really well together. If you use Mosaic or Nelson be careful, I find they can overwhelm other hops, which you may or may not prefer. I don't like Nelson but I like Mosaic when it is not the star of the show.

    New plan for the hops ~100 IBUs, 6 gal with OG ~ 1.077 (BrewCipher):
    Columbus 0.5 oz (60)
    Columbus 0.5 oz (15)
    Mosaic/Amarillo/Cascade 1 oz each at 15, FO and hopstand at 175
    DH with 3oz Mosaic/1 oz Amarillo/1oz Cascade

    Looking forward to this. Opinions always welcome!

    No one else seems to have mentioned the Simcoe that you've got, but I love that shit. Make sure you mix that in with the Mosaic and Citra. If you're doing any of the ever-so polarizing mid-boil additions, Zythos would work well then.
