    @Yargamo the proof is in the pudding. Err, in the steak, I guess. :wink:

    A lovely char; incredibly juicy; wonderful flavor. If I have a complaint about this recipe, it's that I like my steaks on the rare side, and that's not too easy to control via this method. (Also, I think I will use only about half the amount of salt for the dry rub next time.)

    A delicious steak deserves an appropriate beer, of course.

    My grilling beer of choice and all around solid IPA from Revolution. Some marinated pork chops with rosemary from the garden along with some mesquite chips in the smoke box for an early dinner. Celebrating my final day of physical therapy. Time to hit the pavement more and start burning these beer calories.

    That is what I was expecting you might say, as I too prefer a rare steak. Therefore I always broil. Glad it worked out enough for you. Enjoy!

    [​IMG] Well on vacation and its becoming more of a stayca. Had to hit my doctors today I've been having some nerve issues in my right arm. Next thing- X-ray. That killed 1/2 the day. Now looks like I may have to have surgery for discs in my neck. WTF. So for sure time for beer. Sweltering here now and gonna get worse over the next few........I have not had an issue with Smaltz. I enjoy this "AmericanCraft Lager". And my butterfly bush is really starting to attract some beauties. You know butterfly wings are like little radiators. With song....[​IMG]

    I normally stick to the grill, and I will continue to do so for most steaks in the future - and loving it rare is a big part of that. This was a very nice change of pace, though, and I'm definitely pleased with the result.

    I initially thought it was a gamble for an old bottle. But the next day the main guy posted to their FB page that it was indeed the correct price. It's a pretty good beer, and at 4 bucks for a 750, I could make a few last through the rest of summer.
