I've been working on building up my "cellar" so by no means is it impressive but...

(B)= no less than 8 bombers and usually right around 10-20 smaller bottles
(T)= the sky (or square footage) is the limit.

I'd call them more of "action levels", generally I reserve panic for more serious issues :stuck_out_tongue:

I let my local stores be my cellar.

My (b) numbers consider two factors - 4 day IPA consumption plus 3-4 more (8-12) in addition to a slower moving non-IPA stockpile (not specifically drawing on cellar). The other factor is the "how much do I need to ride out the apocalypse" number, which is much higher and involves a staggering need for as many Samichlaus Classics I can find.

I actually thought of my upper number today because of all the beer I brought back from Michigan. I basically have about 25 hop forward items I need to dispatch in addition to some exciting items I need to get to that I'm not trying to cellar. Top (t) = two weeks worth of consumption, no more than 3 a night for 5 days a week. So I guess 30?

I don't put beers that don't age in the cellar. I have a separate locker for my "drink now" stuff and IPA's go in the fridge. If a beer in the drink now cellar stays there longer, usually it's a beer that's ageable anyway

I don't panic over beer. When my supply dwindles closer and closer to 0, I instead get excited in anticipation of a trip to my preferred bottle shops to replenish. I usually stock up with 40-60 bottles/cans at one time and finish them all before hitting the bottle shops again (so I can redeem all my empties at once). My "cellar" usually consists of no more than a handful of age-able styles (stouts, barleywines, etc).

When the 25 or so high ABV cellarable bottles are gone, I think I'm done cellaring.
I always have 15-20 beers in the outside fridge which is cool, because like George Thorogood, I drink alone

This is not meant to be bragging in any way, but I am with you. I was stressed out when I got a beer out of the fridge tonight because I was "almost out of everday beer". There are over 30. The cellar is probably around 200. I tend to immediately relplace anything I drink. I am a hoarder. I probably need help.

    panic level
    - garage: less than 2 cases
    - cellar: less than 50 bottles

considering I have about 10 cases in the garage and a few hundred bottles in the cellar I am calm

Ditto. I haven't had to panic in quite some time. Now my problem is where do I put all of this!

I run low drinkable inventories because of freshness. I have a slew of age worth stuff I don't need to worry about, but at 95 and humid it's not even a thought.
