Ideal Local Brewery

    While I enjoy all sorts of beer styles, I would love to see a brewery open up and specialize in stouts. I would like the brewer to offer barrel aged imperial stouts, sour stouts, oatmeal stouts, American stouts, Irish stouts, foreign/export stouts, and experimental stouts of all styles that would add a variety of different ingredients. I like stouts.

    I kind of already have it in what's immediately in my area with revolution, off color, pipe works, ale syndicate, arcade, piece, around the bend, 350, maplewood, and 51st ward all being less than a mile and a half from me.

    A brewery that produces whalez so I can trade them for other beers throughout the country. Instead I'm just stuck with Half Full Brewery.

    American Farmhouse brewery, focusing on wild and mixed fermentation, Saison, and hop heavy light pale beer. Occasional traditional clean Belgian batches, say a Belgian Single in the summer, Quad in the winter, etc. Rustic, yet classic setting, low pretentiousness, down to earth. Semi-regular special bottlings of oak aged beer. So I guess Belgo-American esque.

    Recommend you try "Fuck Art - The Heathens Are Coming" by To Øl . But, like you said, might not be readily available.

    I honestly can't get enough of the general dark fruit style Old Ale,Strong ales or barleywines so anything like that. As of now pretty much no one besides HOTD is really putting much effort into it on a grand scale. And most are still seasonal.

    Yeah, the bars in NYC are such that it's possible. I remember once having cask Smuttynose Shoals at one Pony Bar, and then going across town to have cask Smuttynose Hayseed at the other Pony Bar. I've had Two Hearted from cask and keg at the same bar. When I ordered both, the bartender said that a manager didn't think it made sense to have both of those on at the same time. I told the bartender that it's a perfect opportunity to be taken advantage of as a drinker. Singlecut's Keith is their take on a bitter. They once had that in their taproom three ways: cask, keg, and nitro. I know you're not a flight guy, but given that I was driving, getting a flight at Singlecut that day was an absolute no-brainer, "I'll have Keith all three ways please."

    I want a brewery that serves the usual american beers, and is themed like a moody viking hall. Dont ask me why though, I couldnt explain the connection. It just feels right.

    And NEBCO. And OEC. And Kent Falls. And Beer'd. And Black Hog. Aside from the canning issues CT is a pretty good state to be stuck. And NYC is 50 minutes from Half Full?

    All of those places might as well be in Massachusetts given how early breweries close and rush hour traffic on I-95 and the Merritt / Wilbur Cross. Beer'd is basically in Rhode Island.

    Haha! Right? I live in Norwalk. I went to NEBCO a month ago. It was a two hour drive just to get there. What a pain in the sack.

    I'm with you on this. Though I've got a slightly softer stance on experimentation, I wouldn't mind some one-offs that tinkered with malt and hops as long as they don't contaminate the core line-up.

    Sours and wilds. There just isn't shit for that kind of beer in the Chicago suburbs.

    I would like a strong variety of IPAs that also bottles like Trillium. Love going up to that brewery,

    I would say that my local Barrier comes close to this expect they bottle much less.

    A brewery that made a variety of hoppy styles including dry hopped varietals plus other interesting styles would be ideal.
