Onion bombs

    I've never gotten garlic, but I taste some onion in a few Stone beers, especially Enjoy By.

    By far the most onion tasting beer I have ever had. It took an awful lot to finish it. Thank God I had 1 glass at a bar and didn't get stuck with a 6 of it. My drain would have been pissed at me for sure.

    I wonder if this is one of those flavor notes that only some people can taste. 27 years of drinking (including some of the beers mentioned in this thread) and never have I noticed onion and garlic flavors in my beer. I do eat a lot of onion/garlic foods, so its not like I don't know what those flavors are.

    Yeah, it's not the beer it's you. For every person who gets onion there are many more who don't.

    Pretty much this.

    Your genetics play a huge role in what you perceive in aroma and flavor. Humans have around 1000 olfactory receptors, but only around 350 are active. Which 350 olfactory receptors that are active vary from human to human. Thus why some people might smell onion and others smell tropical fruit. So in regards to taste, aroma can be responsible for nearly 2/3s of gastronomic enjoyment and your perception of flavor. (As tested by Henry Finck in his book "The Gastronomic Value of Odours).

    A lot of the hops being discussed in this thread contain 4-mercapto-4-methylpentan-2-one (4MMP) as well as 3-mercapto-4-methylpentan-1-ol (3M4MP) - these thiols give hops those tropical/fruity/citrus kind of flavors. Toru Kishimoto (Asahi Brewing) did research into these thiols and discovered that beers low in copper sulfate can increase those pungent/onion flavors from the hops.

    like some said...summit is supposed to have a lot of allium notes going on, but sometimes im sure its masked by the blending of other hops, and the malts that they react with inside the bottle. the 'dank' marijuana thing is easily explained since the plants are in the same family and once were catagorized in the same genus. and in my opinion, thats a great family to be in!

    I get mad onion in Grunion... and I don't think the name helps my subconscious overcome it. Also thought I got a decent bit of oniony nose in Lawson's Super Session #2.

    I'm glad this thread is here because I've been noticing this more and wondering the same thing. My thought was maybe it's Galaxy hops. Is that crazy/wrong?

    Good to know there's a relative consensus on Summit though.

    After enjoy by's 4/20/14, that shit went downhill. Went from an amazing piney, floral beer to a grassy onion bitter bomb for all the releases afterwards. Disappointing.

    Really? I think it's gotten less oniony. I also think the whole "4/20 is the best batch" thing is nonsense. It's just because it was labelled 4/20 so everyone was like "wow this is so dank. 420 get it?" They put that "dank" thought in your head so you actually look to pick it out. In reality it's been the same beer almost the whole time.

    Just had a bottle of Stone's 19th anniversary, "Thunderstruck," IPA featuring all Aussie hops this past weekend.

    I definitely got a very distinct onion like odor from that one.

    And I'm the kind of person who rarely gets onion odors and flavors. Even from Mosaic hops and their ilk. But Thunderstruck was onion like for me.

    Like he said, summit hops. A dank ass, very high AAU% hop that should only be used sparingly in a hop blend. Columbus /tomahawk hops (along with a few other varieties but that one sticks out for me) can give a similar onion garlicy flavor when used in excess too. One onion bomb that comes to mind for me is Evil Twin's Molotov Cocktail. Holy crap it was awful!

    I definitely got garlic from Stone Ruination. And I remember getting a hint of it from Sierra Nevada Hoptimum. Not my favorite of beer flavors at all.
