Looking for insight on which one to cellar and build a vert on. Appreciate the insight.

    Why not do both?

Do you prefer hops, or malts?

There's your answer. Bigfoot will always be hoppy until the hops oxidize, then it tastes like cardboard.

Yeah, two different beers. Why not do both, neither are expensive or hard to get.

I'd like to but the limiting restriction is on space. Am I right in guessing that the NC Old stock will be maltier? Thanks.

Old Stock is a maltier beer by default, and does much better with age from my experience. Bigfoot is just an Imperial IPA to me and only has a limited sweet spot before it's an oxidized mess. I've tried it fresh all the way to 1999, and only the 2009 was tolerable for me. Old Stock, any vintage going back to 2004 has been wonderful.

Just had a vertical of Old Stock, 2002 to 2006, the 2002 was hands down the winner.
