Subterranean Competition

    Local homebrew guild is hosting a "Subterranean Throwdown" in mid November that I would like to enter. I`m considering an all beet Berliner weisse, but curious if anyone would have other suggestions. The ingredient just has to be used for flavor, aroma, or mouth feel. The ingredient can be used alone or with others. Is there another fruit that may pair well with beets in a Berliner?

    Subterranean, as in you have use ingedients that come from the ground? Licorice root, sweet potato, truffles are three that immediately come to mind. Of course you should use well water. There are probably some other spice root type things. Be sure to fine your beer with bentonite. Or are you stuck with beets

    One of the ingredients must grow underground. Well water obviously would not count, but would be clever. I honestly don`t know what beets even taste like, but the beers I`ve seen them used in are a brilliant red color.

    I think roasted beets are delicious, but I would never put them in beer :slight_smile:

    If you really want to use beets, I would go for something that would work with their "earthy sweetness" maybe a dark beer with caramel malts, maybe a little bit of roasted malts, a saison yeast might work.

    With all that said, I still would not add beets to beer :slight_smile:

    Peanuts grow under ground. So maybe a peanut butter stout?

    Carrots are relatively high in sugar content and you can use them to make a carrot cake beer, or use carrots in place of pumpkin in a pumpkin ale and keep everything else the same. I made a beer with carrots before and it turned out ok. I used too much ginger though.

    Or, just go all out on ginger. Off the top of my head, Make a slightly more malty pale ale (75% 2 row, 10% munich, 10% crystal 40, 5% Golden Naked Oats) add lots of ginger and use some spicy/floral hops to bring it out (maybe a good use for Crystal hops).

    Initially I was thinking a sweet potato casserole brown ale, but that seems rather bland. Sweet potato, marshmallow, cinnamon, and brown sugar? I reached out to a couple of breweries but none were too helpful with how to get the marshmallow flavor and aroma.

    Marshmallows are sugar, corn syrup, and gelatin, coated with corn starch. I think their flavor is pretty much just sweet. It's the texture that makes them unique. But if it's a toasted marshmallow flavor you want, maybe try mixing some corn syrup with sugar, and boil the bejeesus out of it until it's scorched a little. Just an idea...I've never done this.

    @jbakajust1 ya gotta wash beets before ya cook'em, amateur.

    I make a beet IPA which is different, not dirty, but good enough to make every year. Also like the bright red color.

    Don't really see the point in washing the dirt off of a food that tastes like dirt. Beets straight from the ground covered in muck taste like dirt. Washed beets roasted on a plate taste like dirt. Dirt. :wink:
