Mixing hops... Can it ruin your beer?

    So, a friend and I are brewing a beer this weekend and we have a substantial amount of Galaxy to use.
    Galaxy, as I understand is great for flavor/aroma but we also have some Columbus.
    My question is: Can we use the Columbus for bittering without the acids interacting with the galaxy acids to make a something we regret or would it be a good combination? TIA

    I use Columbus to bitter all the time in hoppy beers. Just add it at 60 and you'll be fine. It will add little if any to the final taste.

    Use the galaxy at 10, 5, 0, whirlpool and/or dry hop to flavor and aroma it up.

    Awesome news. I was hoping that would be the case but couldn't find any definitive answers on other sites. Would you recommend a large quantity of Columbus or 25 grams would be enough?

    I use Columbus exclusively for a bittering addition in my IPA's. As mentioned above. Just load up the Galaxy at the end and you'll have a nice beer.

    I usually do a 1 oz (30 gm) addition at 60 min. or as a FWH.

    I'm gonna be that guy and put it out there that 1 ounce is 28.4 grams. I used to be both an engineering student and someone who did stuff that's illegal in most places. Conversion is important.

    One more question please, mate. Would a mix of galaxy and columbus for bittering make the beer taste like crap or will they go together well?

    Maybe 30g would be too much for you, you did mention planning on 25g. Columbus is a fairly high AA hop, Have you run the numbers through a recipe calculator?
    I don't know how much either of these hops cost in Australia, but for economy's sake, in US cost, I wouldn't waste Galaxy on bittering. They'd probably go fine, though.

    Beersmith says 28.3 grams = 1 oz ...I imagine some brewing software that dabbles in both units would be useful in different parts of the brewing universe : )

    In general, I do not think you will ruin this beer by introducing modest amounts of two hop varieties to each other. I think the worst that will happen is the hops will lack complementarity, and will not stand out. If you start using extreme levels of hops, more objectionable qualities of the pairing might come to the forefront. But so much of this homebrew stuff is personal, so you are going to have to play around and decide for yourself what you like.

    Plus another tobittering with Columbus. I would caution using flavor/aroma hops for buttering. At times some have givin a cat pee and or super strong bettering to a beer I have not wanted. Never got that from Columbus magnum and other bettering type hops. Best of luck with your brew!

    I bet most recipes home brewers use contain more than one hop variety.

    If you are using a 60 minute addition for bittering imo it really doesn't matter which hop variety you use. There is not much flavor derived from the 60 minute addition outside of bitterness. No matter what style I brew I use high AA clean bittering hops, and just adjust to my desired IBU.

    Plus another for bittering with Columbus, flavor and aroma additions with Galaxy.

    Heck, mix a little Columbus into the late boil and/or dry hop too! That's what Trillium does from Congress Street, and it is a fantastic IPA. The dankness of the Columbus helps to temper what would otherwise be a tropical-fruit-bomb.

    It's really hard to screw up a beer with these hops at any time in the boil. As long as you're keeping the IBUs around your intended target.

    Hell, I had a DIPA by Flying Dog that was made exclusively with all columbus hops, and it tasted awesome. They're used mainly for bittering, but I really enjoyed the flavors from this one. I think you're over-thinking it, because there are a lot of hops that go well together, IMO.

    The exception would be Sorachi Ace coupled with more Sorachi Ace : )
