Uses for Old IPAs

    There's a lot of talk about old/"fallen off" IPAs, and they can be pretty dissapointing experiences. To punch mine up, I like to throw a splash of Goslings dark rum into them. It turns something underwhelming into something really tasty. A friend of mine uses them in marinades for beef.

    What do you when you're faced with an old IPA in your fridge? Just drink it, or get creative?

    I add a bit of pickling spices and simmer bratwurst in it.

    I drink them.

    An IPA that has 'fallen off' is a delicious beer who's flavors are less intense than they once were.

    I always seem to be drinking old Pliny. I buy it to trade and then it gets to be three months old... Still delicious!

    Sometimes cook or make beer bread with it. Sometimes drink them as they are. Hopslam turned into a pretty tasty barely wine with a year on it. Sometimes, I'll make a beer-mosa with orange or grapefruit juice. Anyway you go, it's all good. It just depends how old they are.

    I'll usually drink them at most any time, but I have had multiple IPAs or APAs sitting around that I just wasnt' "into" and needed beer for cooking. Although I've used them in several ways (sometimes with success, occasionally a flop) I do have a few mainstays. Similar to @MacQ67 , I throw in some onion and celery into a pan full of repurposed beer to make that "brat hot tub" mentioned in the Miller High Life commercial a while back. @fthegiants mentioned beer can chicken, which I've done also but I'll usually pour about half out and replace it with OJ or cranberry juice, depending on what I'm going for with the flavors. Finally, I'll add a beer to the BBQ sauce for grilling / smoking ribs.

    Isn't it sad that the beers actual foundation is crap. The only thing holding up some ipas is so much hoppy goodness that it hides and shields the bad. I tend to drink, hold, and maintain ipas that seem to hold up much better than others. Many ipas are in fact more in line with pale ales or blonde ales as the hops fade far away. The better ones have a solid malt and yeast presence. The drain pours seem to be made alms too fragile IMHO.

    Is a beer that falls off so quickly even considered good in the first place? Paper dragon status

    Beer Bloody Mary. Did this with a 3 year old Hercules DIPA I took home from a NYC craft bar.

    That sounds good. Maybe I should try actually cramming some fruit into the beer and letting it sit a little while in the fridge...

    That's a good point. I feel like you can really separate good from bad by how they age. Some still taste great (though drastically different), but some are just blah or worse (thus this thread).

    Recently, I've had some old Pipeworks (Citra Ninja and Ninja Vs. Unicorn) and Stone IPA, and both were actively unpleasant to drink. Others are still enjoyable and worth drinking.

    Does that give you a better high? Just kidding, cooking with beer is almost magical, and there really is no limit to recipes. Some of my drunken choices have been the best!

    I've never tried that before .... sounds interesting. I know for me, that adding grapefruit juice to a super old IPA adds a little rind bitterness to it. It's not bad. I actually have a stange that I will use for this purpose. Besides, then I am not wasting a beer that I have carelessly forgotten about.
