    Another brewyear is almost upon us. Crazy.

    Tonight I pulled samples of my passion fruit, peach, and pomegranate lambics.
    The passion fruit is using a single 30oz container of the passion fruit concentrate from The Perfect Puree in 2.5 gallons, and it is VERY strong in passion fruit. Absolutely delicious.

    The peach is 2.5 gallons sitting on 6lbs of peach puree from Oregon Fruits. A real peach assault.

    Pomegranate is another 2.5 gallon batch sitting on a single 30oz container of the pomegranate concentrate from The Perfect Puree. Tastes very similar to Rodenbach Caracter Rouge, subbing lactic sourness in place of acetic sourness. Strong cherry+raspberry flavor.

    Really excited for these three to mature over the next 4-6 months.

    I need a way to use up 8 oz of EKG, Fuggle, or Tett. I need some freezer space. I'll brew some sort of German lager/cream ale on Monday. Maybe an RIS afterwards.

    Currently, I have US05 munching away on a Barleywine I brewed last month because 1450 stalled. I can't really blame 1450, as I pitched on a cake, and had a massive blowout. Lost at least half a gallon, and a heck of a lot of yeast went with it.

    Should have used fermcap...or apparently more than the 1 gallon of head-space I allotted.

    Anyway, I plan on brewing a Golden Strong sometime this month that will see some rhubarb.

    Racked ~4 gallons of my golden sour that was brewed on 08/19/15 with CS Dregs and 1056 onto 6lb of mix berries and 1 gallon onto raspberries.

    I just picked up ingredients for an Imperial stout that I will brew on Friday. Shooting for an OG of 1.10ish. Planning to age this one on bourbon and oak cubes.

    I had previously bought ingredients for a Pannepot clone, but I could never quite construct a recipe that worked. Instead I'm going to take all of the grains / sugars I bought and put them towards a big, black saison. I was going to use Carafa Special I and III, so hopefully these debittered grains won't come off as too astringent and harsh in a dry beer.

    Grains: Pilsner, Munich, Special B, Carafa I, Carafa III, flaked maize
    Sugar: D180
    Hops: neutral bittering
    Yeast: WYeast 3726

    Planning on an OG of 1.080 and a FG of 1.010. Low-ish IBU for a saison.
    Does this sound like it would work? Would a different yeast work better?

    We don't really have anything like that here (that I can find at least).


    I won't be able to brew anything this month, but I will be sitting down and calculating what brews I need to put down and when for next years competitions (will be my first entries to any comps).

    Sunday I am brewing 10 gallons of IPA. Five dry hoped with Citra and five with Simcoe.

    Just smoked 4 lbs of pale wheat malt on smoldering hickory/Apple wood chunks to use in a big 'smoked and oaked' Weizenbock. This is attempt number 2 and all went smoothly this time around!

    Transferred my FW Wookey Jack clone to keg for dry hopping, will crash and transferring to serving keg in about a week. Smelled and tasted pretty good so fingers crossed.

    Tasted my zombie dust clone today... Color is a bit weird, but the aroma, flavor and quality of beer is fantastic. I have a bottle of ZD I am going to put it head-to-head with next week... Moved my whole batch into the fridge to cold condition a few days before digging in!

    I have a beechwood smoked porter in the fermentation chamber that just finished primary fermenation. I have plans to brew a Simcoe, Galaxy, Mosaic IPA in the next week or so. I haven't brewed a hoppy beer in awhile but I've really been craving one on tap recently.

    Back from my travels,going on down to the winter brewing headquarters to make a IPA and the Belgium dark with raspberries. Winter headquarters is a art foundry, so lots of interesting projectsz and folks. Owner lives for IPA so I'll be makin that every other batch.

    I am drinking on my Beachwood smoked porter and every day that goes by the better it gets. I needed something on tap and put this on a little early. It's growing on me. I may have to put this on my by yearly rotation! take care.
