So you're saying a beer you've never had is perfect?

as I said earlier, hopslam is my best, but, if I tried a sip of sunshine which I read great things about, it MAY be my future best.cheers!

Peche Mortel. Anyone have any suggestions to "improve" this glorious piece of work, because I sure can't think of any.

I think having a hefeweizen in the top 250 shows how well this beer is made. Not really an exciting style, but damn is it good.

A perfectly constructed beer can be a beer of simplicity or it can be a more complex beer. IMO it comes down to how well the beer is balanced. It can be balance in a more simple way but I personally can find balance in a more complex beer.

    So,

    A more simple beer:

The first beer that popped into my mind is my homebrewed Kolsch. A relatively simple beer from an ingredients perspective: 100% German Pilsner Malt, German Tettnang hops for bittering and Kolsch yeast strain (Wyeast 2565 for me). The brewing process of this beer is non-simple but not too complex either.

This beer has a tasty but relatively simple balance of German Pilsner Malt flavors with some subtle but noticeable white wine type flavors.

    A more complex beer:

I am reminded of a past drinking experience that I posted in a previous thread:

    Freigeist Bierkultur Hoppeditz

“This beer is a Sticke Alt that was brewed in Koln (Cologne). This is only the second time that I have had an Alt that was brewed in Koln. I asked the bartender about this and he educated me that Freigeist means Free Spirit in German. This beer was OUTSTANDING! In the parlance of Tony (BA boddhitree) this beer was WOW-WOW-WOW. There was so much complexity in this beer. There were some subtle smoke flavors but some dark malt flavors going on simultaneously: toasty, woody, licorice, toffee … plus some spice & a tiny bit of fruitiness. There is so much going on here (in a good way) that I can’t really do justice to this beer in describing it. This beer has more layers than Shrek!”

While there was a lot going on in Freigeist Bierkultur Hoppeditz every flavor & beer quality was in balance. Nothing dominated and nothing clashed. Simply put: a WONDERFUL beer!

    Cheers!

I Love KBS too, it's really a great beer, one of the few that I actively seek out. But it can be harsh and astringent too, while being one of my top beers it's certainly not a perfectly constructured beer. I love it, but it could use more barrel, it could be a bit thicker, it could be a bit smoother, the coffee can be a bit bitter. I love it as it is, but it doesn't compare to Bcbsc. Just an example and IMO of course. Bcbcs needs absolutely nothing.
