    Do you use the honing steel or one of their sharpeners. They sell a tabletop sharpener. It's under $20 and specified to their blades so I bought it. I would like to stay away from a whetstone if I can help it.

    I've been using one of their sharpeners. Seems to work pretty well.

    OK! In honor of LNBA I have resurrected my rice cooker. ( You know who you are @5EKF ) Today I cut my chicken with my new knife . It was quick work for sure. I think I am going to like these new knives. The secret to generals chicken is to make the right coating. 4 tbsp of cornstarch to two eggs. Beat and add chicken. Came out like this.

    Cheers! I have a brand new tripel for later.

    That's all the oil I took back out of the pan. I started with about a scant half cup.
