Drinking Homebrew - January 2016

    Really enjoying my 1st all-grain brew...its my "Treehouse IPA Clone v2.0" done w/ Amarillo/Citra/El Dorado and WY1318.

    It held up well in a blind aroma/taste showdown vs. Green...my better half said she "loved them both" and she actually identified mine as the TH brew. There's still a few tweaks that I'd like to do for v3.0 to get the taste/mouthfeel a little closer (slightly less boil/bittering hops, more whirlpool & dry hops, slightly tweaking the hop bill), but its cool to make such a tasty brew!!!

    (*also, need to work a bit on decreasing the amount of hop sediment that makes it to the glass...my beer is on the left)

    Big thanks to @VikeMan for helping me get my stout to taste like a chocolate stout and not a sour stout.

    First pour off my first all grain stout. 7.35% Chocolate stout, cocoa powder added so head retention isn't a problem. Still early but already tasting good!

    Is a treehouse clone or a green clone? i ask because of you're trying to clone Green I thought it used a lot of Galaxy hops.

    A bitter I made in July. Held up well, hops have dropped off but no taste of oxidation yet.

    A bit too aggressive pour (distracted by oldest son), of the Averagely Perfect Saison.

    It's anything but "average," great brew.

    I rarely drink any beer above 8% but this intrigues the hell out of me.

    Bottled some Cherry Rye Sour tonight and some Hoppy stuff too. Had to pour myself some before hookin up the Beergun.

    RIS with Kate the great grain bill and Chinook hops. Delicious. Got a couple yeasties going. San Diego super and the new Burlington ale yeast. Should be interesting

    My “Prime Time” smoked porter finished and is drinking so nicely! I used 9oz of Beechwood smoked malt in the grain bill which ended up being a bit more intense than I expected for the %, however, I am very happy with it because the flavor is really delicious... It should only get better with a little more age on it and the smoke just mellows out a tad to better balance some of the roast character from the black patent and chocolate malt.

    Only 5.1% ABV, but I mashed higher at 156-157F and the addition of oats into the mash made for a very nice, heavier mouthfeel for the ABV… It drinks like a bigger beer than 5.1%, which I really dig.

    Very happy with how this one turned out.

    Just my attempt at a TH-style big juicy fruit bomb hazy New England IPA. All I had at the time was a Green to compare it to for appearance and general aroma/taste. According to their website, Green uses Australian (most likely Galaxy from taste/aroma) and American Hops.

    Now that I think I have the general base recipe in shape, I'm going to start experimenting more with the hop combos...

    Drinking a beer made with Citra and ADHA-529. Used 4oz of each hop. Surprisingly, ADHA-529 is stronger than Citra. Both hops were from the 2014 harvest and this beer is still packed with aroma and flavor.

    The description of ADHA-529 from the grower is lemon, green tea, coconut, hay and mint. I pretty much agree with that. In terms of flavor, lemon is the strongest, followed by green tea with a little coconut milk in the finish. I didn't get any hay or mint. The aroma is similar to the flavor. The lemon is less strong. The coconut pokes out here and there and sometimes disappears. The most prominent aroma is herbal.

    I'm glad I tried it, but I'm not loving it. The lemon and green tea over powered the tropical flavors of Citra. Might have liked the flavor better with a smaller dose.

    Is it a bit like sorachi ace in the way it tastes like coconut?

    I only get lemon and dill from Sorachi. The coconut in 529 is mild, but it's definitely noticeable in the aroma and the finish.

    If you used enough 529 to get a moderate to strong coconut, the beer would likely be unpleasant in the lemon and green tea department. This could change with future harvests.

    I used 2oz of 529 at 15mins and 2oz for dry hop.

    Of the last three sorachi ace harvests I've got my hands on, two were distinctly lemony-coconutty and the other had the dill as you mention with much less coconut

    I guess it's different how we all perceive certain flavours

    Just cracked open my well hopped bitter from a couple of months ago that has not cleared. No idea what I did wrong but it's still tasty enough

    And we rarely use a hop from the same hop farm in the same condition and probably never in the same beer. So many variables. It's possible we perceive flavors more similarly than we think. :slight_smile:

    First pour from my first kegged homebrew - a dark mild. Still a bit undercarbed but very enjoyable! I fermented with Wyeast 1968 and it finished and dropped after 48 hours - that was 2 weeks ago. It's going to be hard to hold back to see how this develops.

    Friend bought his first homebrew kit and I helped him brew it. Changed the hop schedule and fermented it in my fridge. Turned out very well. Cascade and centinnel hopped pale ale. Very clean with citrus and floral hop notes. What a big difference fermentation temp control is. My first pale ale without temp control was twangy and estery. This is sooo clean.

    Ahhhhh, my contant struggle. I need more kegs. The stout I just kegged I want to wait at least two weeks before really drinking it. A week in and I've poured @10 glasses.

    Looks good! Enjoy your draft beer, it seems to drink itself.

    Thanks! Brewing up a Galaxy IPA tomorrow with US-05. I'm hoping to do a NE IPA with London III soon and I've been following your experiences lately. Appreciate all the details!
