    Basically finished the keezer this afternoon, except for a little bit of finish work. Pretty happy with it.

    Kegged my DIPA just now... Easily the best beer I have brewed to date. The aroma, flavor, everything... Just perfect.
    It was worth the 1-LB of hops in 5-gal!

    I'm brewing a Dubbel tomorrow with some dark belgian candi sugar and i think i may add some raisins to it

    What yeast are you using for that. I'm doing a Quadrupel soon and was going to use WY1214 but i see a lot of complaints with it. I'll probably go with wlp500. tks

    I thought about it, and running RasberryPi for a tap list. Decided it was way cheaper to just use blackboard paint.

    I'm using WLP530. White Labs' Abbey Ale yeast. the Westmalle strain

    Those are the same yeast. I have never had an issue with that strain.

    The electrical panel is 100% ready for operation! (Sorry for the poor picture quality). I'm going to machine an aluminum plate and place it between the pump switches when I come up with a name for my brewery!!

    Racking/draining/dryhopping new ss fermenter to keg today...curious to see how pseudo conical concentrates yeast and trub. It already has some + and - compared to my normal buckets.

    Probably going to mill some grain today for an upcoming 10 gal batch. Will also do some quality assurance tasting :slight_smile:

    Been a slow month.

    Didn't get to brew anything, but we did bottle up our Galaxy/Citra/Mosiac IPA yesterday. It smells amazing and the sample we took tasted great. Can't wait for it to carb!

    That keezer looks awesome!

    Sampling the beer I brewed on the 12th kegged a few days ago. Rediculous. Could be my best yet. Big fan of less hops in the boil and loading up on dryhops. Citra and Amarillo Columbus might be my new favorite combo. My old favorite was citra and centennial. Either way citra is a rediculous hop

    Next beer is going to be Equinox / Amarillo. After that, it's going to be Idaho 7 / US Goldings.

    More often than not, two hops makes a better beer for me than 1, 3 or more.

    Same with me - two hops is the sweet spot (well two flavor/aroma hops). With my taste buds and limited brewing abilities I feel like the beer gets muddled with anymore than that.

    what's the purpose of disconnecting it? just afraid of getting liquid in the gas tube when shaking? But I guess that doesn't explain the disconnect for 2-3 hours. I've been trying to perfect this shaking/quick carbing method so any answers would be appreciated!

    Disconnect between shakes to keep beer out of the gas line. Disconnect and let it sit at 30 psi for 2-3 hours so the co2 absorbs into the beer while preventing overcarbing. The few times I forgot to take the gas off for that rest the beer got overcarbed as fuck.

    4-5 good shakes + 3 hour rest at 30 psi yields a perfect pour at this point for me.
